    Cashew Chicken Recipe:
    1 lb chicken thighs, cut into 1-inch pieces
    1 tablespoon cornstarch
    1/2 cup cashews, roasted and unsalted
    1 bell pepper, chopped
    For the sauce / dressing:
    3 tablespoons hoisin sauce
    2 tablespoons soy sauce
    2 tablespoons sesame oil
    1 tablespoon honey
    2 teaspoons minced ginger
    1 garlic clove, minced
    1/2 teaspoon salt
    1-2 tablespoons rice vinegar / lime juice
    1. In a bowl, combine all the sauce / dressing ingredients except for the rice vinegar and give it a mix. Set aside.
    2. Cut the chicken into small pieces and sprinkle in cornstarch and salt and pepper to taste. Mix well until the chicken is thoroughly coated.
    3. In a wok or frying pan, heat the oil on medium-high heat until it's shimmering. Add the chicken and let it sit for 2-3 minutes to crisp up. Once you can easily lift up a piece without it sticking, stir fry for another 6-7 minutes until chicken is completely cooked through. Add the red bell peppers and cook for another minute or two, then cashews and let it roast for a minute. Pour the sauce mixture and immediately turn off the heat and stir everything to coat.
    4. Serve with hot rice and enjoy!

    Okay, I was stressed out for you during this whole video wondering if you were gonna beat that clock! LOL! Considering you didn't already have everything laid out and prepped, that's amazing! And the end result looked delish, too!

      Ahhh! some days are like this tho minus the filming cause when they want food, they want it now!! lol it was fun to challenge myself tho. the recipe was yummy!!

    Mad respect that you didn't prep beforehand. A lot of times those 30 minute meals don't count the prep time which i find annoying so yeah thanks for the honesty! And for the rice/water measurement rice is truly my achille's heel

    You cook like a westerner. Chinese never seasoned our meat with salt and pepper. We use salt and sugar, but the sauce looks good. I totally agree with the ridiculous price for meat and produce. The regular price for a head of lettuce is $6 CAD. It use to be $3 and pre Covid it was $2.

    This looks so good, Hubby would love it. Son can’t eat it but I would cook it without the nuts and serve him and then add the nuts for us. Mmmm

    Place plastic wrap over your grater before you grate the ginger or garlic. It will still grate, and when you're done just lift the plastic wrap and the grated ginger or garlic are in the plastic wrap. Easier to use that way.

    Def listen to her 'dont stir chicken when you put in the pan for 2 minutes' or else the coating will fall off and make your pan a huge mess!!

    I forgot to mention....$10 for a gallon of milk? OMG! Where are you buying your milk or maybe I should look at milk price to see where it's at right now. Crazy. I found out from another SoCal person that avocadoes are like $2.50 there. I thought it was expensive when it went from $.58 to .$78 recently. LOL! I recall the good ol' days when I can get them on sale for like 4-5 for $1 in Austin. Normal price was probably 2-3 for $1.
