This could also work with biscuit joconde cut into rounds and a chiffon as the mousse as chiffon filling is like your mousse recipe, but made with fruit curd thickened with gelatin like your raspberry mousse instead of butter and folded into meringue instead of whipped cream.
Hi, simple question, you are using 250g of rasberries for the mousse, you then strain it, meaning you lose weight from the seeds. I am using raspberry puree, how many grams should I be using as I wont be losing weight as I won't strain it. Thank you!
I'm shocked you didn't temper and fold the raspberry and whipping cream with a spatula! Did the consistency of the mousse remain stable cause of the gelatin in the raspberries? I've always used a spatula out of fear of breaking down the air in the cream but I haven't made a mousse in ages at this point.
