I put cubed sweet potatoes in the filling along with the lentils, bell peppers, corn, peas and I season it with cumin, cilantro, salt & Pepper and red pepper flakes. Very different flavor profile than yours so I am very excited to try your recipe 🤗. By the way I'm obsessed with your butternut squash/ granny Smith apple soup. I've made it 5 times already 😅. It's unbelievably delicious 😋 😋😋😋
Honestly, after Dylan has returned home , you look, sound and are happier than before. I love seeing this because you sound so much more cheerful, glowing in your own way. The old Caitlin seems to be back. I'm soo happy for the two of you 💖
I am one of those who drastically limits oil/fat in my diet. Not only because it's calorically dense but because it damages the endothelial lining of the arteries (you've seen that in the movies Forks Over Knives and The Game Changers). When you don't have oils or vegan butter often, your body neuroadapts over time and you don't miss it. I always appreciate how Caitlin explains the reasons why she uses certain ingredients and how they work scientifically within the recipes because that's been so helpful to know and understand when cooking. It's helped me to become a better cook. I just adapt her recipes to my way of eating and I appreciate all her recipes and the education I've gotten from her over the years. Always give a Thumbs Up before I watch cuz I'm never disappointed!!!
As a Brit, cottage pie and shepherds pie are traditionally different. Cottage pie uses beef mince and shepherds pie is made from lamb mince. The vegan version looks better than both though!
@@maybe1daysoon If you don't like the taste of lentils but want to keep it vegan, you could try using tofu or a vegan mince, and amp up the heartiness with some (porchini) mushrooms. I once got my hands on some FRESH porchinis when they were in season and boy, you could even make carnivores happy with that sauce.
As an American, I'd like to say we knew that. But experience tells me that most Americans do not know that Shepherd's Pie used the meat that the shepherds cared for.

So from a uk standpoint this is probably more of a cottage pie than Shepard’s pie because you use beef imitation broth… also sometimes we put cheese on the top! (Vegan obvs)

Close but Shephards pie in beef and Cottage pie is Lamb! I enjoy making a vegan version too! I am English so it is a classic staple!

Listen if you try sweet corn in your shepherds pie you would take that back. The sweetness is a great contrast that’s how my parents always made it.
