(Part III) How Homesteaders Enjoy Pizza When They Have Limited Options

  • Pizza Dough Recipe:
    1 cup plus 2 tablespoons (250 grams) warm water, about 100-110°F
    1 1/2 teaspoons instant yeast
    1 tablespoons (25 grams) granulated sugar
    3 tablespoons (42 grams) unsalted butter, melted or Olive Oil, or Rendered Pig Lard.
    1 3/4 teaspoons salt
    3 cups (381 grams) bread flour, plus more as needed
    Mix, rise until doubled in size.
    Spread into equal halves and make two pizzas out of it.
    Chuck Roast.
    Buy any chuck roast and simmer the chuck roast any way you like. I did mines in a Dutch Oven and let it simmer in the oven for 3-4 hours at 350F. This cooked meat is universal and can be used in all of the recipes I have in the video. YES YOU CAN USE STEAK ON PIZZAS AND SANDWICHES, HOWEVER A SLOW SIMMERED CHUCK ROAST MEAT STAYS MOIST AND A CHEAPER ALTERNATIVE.
    BECHAMEL SAUCE
    1/2 cup milk
    1/2 cup cream (pure or heavy / thickened)
    1 1/2 tbsp / 25g unsalted butter
    1 1/2 tbsp flour , plain / all-purpose
    1/4 tsp salt , kosher/cooking salt
    1 pinch white pepper
    1/8 tsp nutmeg , preferably freshly ground
    This sauce was used for Chicago Beef Pizza, and Breakfast Pizza. For Breakfast Pizza, I sprinkled a generous amount of black pepper.
    The last pizza used garlic butter instead of pizza sauce.
