It doesn't really make much difference with this type of cheese, it's already soft without melting, but also as you said, personal preference with some customers 👌😀👍

One thing I noticed, you don't do the little American diner trick to get the melt on the cheese. Cover the burgers with a domed lid, then put a little splash of water under it. Steams the cheese, melts it in pretty quick fashion.

The tongue using for beef and also using for ready food (onion) is wrong. Please use separate tongue and ready food keep separate from raw food to prevent contamination 🙏
I been followed you for like 6 months and the one thing that annoys me is that you never give your kollegor som love. I been working both as a busboy and a chefassistent ( köksbiträde på Svenska) and I loved when some chefs saw me and saw my work and appreciated me. I dont see you appreciat your colleagues :(
He does give his colleagues appreciation I've noticed that he says in the video always full of ideas to Maria, he has a great working relationship with everyone in the staff he works with if he didn't the kitchen would be chaos.

He doesn’t have to smash burgers are very thin and that allows escape of gas and that melts the cheese , he saves time overall
