    You are a powerful, powerful man. I was looking for an applesauce recipe. Knew there had to be something better than what we get in the store and thought it couldn't be that hard. Then... I look what Chef John (CJ we call you) has first as I always do and lo and behold. I find this most amazing recipe from you. Amazing for the ingredients. Who would have thunk shallots, garlic, ginger and red pepper would be so darn good in applesau chutney. My house smells so good and it's cooling now. I bow. I bow. Thank you. You're the best.

    I made 3 jars tomato chutney with my dad’s homegrown tomatoes and zucchini, also used up peppers,onions and some passionfruit in it, it’s just DELICIOUS 😍

    I always make apple chutney at this time of the year. Great recipe. I like to put toasted almonds in mine too. And whole black pepper and cloves. Like a traditional mango chutney. Thanks chef John.

    i did this 2x with the second batch using 1/2 c ac vinegar, 1c w vinegar 1 1/4 c sugar and a tad more pepper flake - fabulous - i feel like a chutney pro - thanks cj

    Reminds me of the one I had to improvise in cooking school.I think it had pineapple, pear, dried cranberries and ginger. Pretty good.

    From the comments I think a lot of people are having trouble with the name of this recipe. This is a chutney, not an applesauce that you eat by itself. For those who haven't had chutney, it is used in curry sauces, on different meats as a sauce (as you would use cranberry). Many, many different ways to make it. This one sounds really delicious. Try some on the side of just about any meat, even on hamburgers.

    I do the same thing (with vinegar/sugar/salt combo) but with hot peppers, onion and diced tomatoes. Makes a FANTASTIC chilli jam/chutney.

      Try it, you won't be disappointed!
      Protip: Add half a cup of freshly squeezed orange juice for a fresh, citrusy zing. Goes great with pork or fish!

    I made pear chutney, and used crystallized ginger instead of fresh. I canned it. It pared up nicely with the venison roast my father did when he got a deer that year during hunting season.

    We have apple sauce made with tart cooking apples, sugar and cloves, to go with roast pork. I’m from the U.K. will give this a go, looks interesting 👍😊

    I will try this one with a twist this weekend for a pulled pork. Pears instead of apples, a smoother consistency and some chilis to spice it up.

      You might want to research chutneys and Indian cuisine. Ever had mango chutney? Same principal.

      I used to eat fried apples and onions in Ohio growing up there. I am mostly Pennsy Dutch and Slovenian, and it was normal. Some people are not very used to "sweet and savory," as the British call it. Some people cannot do the "sweet and sour" thing, don't like bbq, et c.

    Food Wishes Thank you for this delicious recipe. I have often made this with equal amounts of apples & mangos. I would be very grateful as I am certain many other viewers would be also if you would be kind enough to upload another version of this recipe for canning the chutney. It would make for a wonderful gift & of course last much longer if it was canned & didn't rely on refrigeration.

      Why don't you look up some mango chutney recipes and compare and in the end come up with your personal version of mango chutney. I found usually that worked best for me.

      I think you can do it with almost everything..mango, pear..mix different fruits/veggies..whatever you like..i think mango and balsamico vinegar would work good together..maybe with a little honey too..

    I've been doing a pretty similar recepie for years, only thing different is that I use apple and plums in equal quantity.

      Sheba Fehmi recommends plums on a clip on her channel. I think quince, pears, mangoes and many fruits would work okay for this and could be mixed.

      I wouldn't be surprised! If I'm anywhere where British people go, I am likely to find chutney for sale, but I am tired of the high prices so plan to make it at home, along with kim chi.

    Granted I've never had chutney so I'm not knocking it, but my initial though is apples + garlic = blech. Would be curious to try it, but doesn't seem like it should work, lol.

    Does this still work out if I use Palm Coconut Sugar or brown sugar, instead of white sugar, and apple cider vinegar instead of the plain white vinegar?

      The sugars would work fine, but they would change the taste a little bit. Brown would probably work better. Maybe a mix of 1/2 brown and 1/2 white. As fr as the vinegar goes, I would try different batches with varying amounts of cider vinegar mixed with the white. All cider vinegar, even though a lot of its pungency will be cooked out, may still be a bit strong.

      Definitely not. Sweetener is no replacement for sugar in a recipe like this.

      Oh no. Stevia is just used in small amounts, in large amounts like this, it tastes really really bitter and bad

    Thanks! I adore chutney but it's hard to get any right in my nabe and it's costly when I've found it. Sheba Fehmi's channel has a plum chutney clip up. This looks fairly easy, and apples are around. Best regards from France. Uprated.

    Just FYI: Conventional dried apricots look that pretty orange because they've been treated with sulfur dioxide. Organic apricots aren't treated with this chemical. They are browner and taste slightly different, but you'll avoid a potential carcinogen if you decide to go organic, at least on this ingredient.
