    INGREDIENTS:
    note: I highly recommend weighing out the ingredients instead of using cup measurements....
    130 grams (1 1/4 cup) Powdered sugar
    100 grams (2/3 cup) Pistachio Flour
    2 egg whites
    30 grams (1/8 cup) sugar
    100 mL (1/2 cup) water
    Ganache:
    1 cup cream
    1/2 cup sugar
    2 tbsp butter
    1/4 cup pistachios
    1 1/2 cups white chocolate

    I like you have shown the various techniques of making macarons, ie the simple meringue and the syrup version. I have now made both on and feel the simple meringue is best for beginners with more consistent results.

    The reason why people usually say to allow the macarons to mature for 24 hours is because since the shells are usually not flavoured (with the almond meal mixture) the flavour of the ganache makes its way inside the cookies and gives it the sense that the cookies are flavoured, when really its not. It also becomes more chewier through this process.

    Great presentation! It looked very easy!! Pistachio flour - pistachio nut place in the blending machine or food processor and refine the nuts = pistachio flour.

    Im making macarons for the first time tonight. Using this recipe, switching a few things around to use the french method, and I'm making them look like Christmas wreaths :)

    Best method using fresh pistachios for flour and paste rather than pre-made who knows when. Shows high quality. Same method used by Pierre Herme. Will be making some soon. Thanks.

      Just wondering, did you make them using 1 egg white for the dry ingredients and one to whisk until stiff peaks? I've been wanting to make macaroons but afraid his ingredients weren't proportioned! Please reply, thank you so much!

    Hi, thanks again Byron for the wonderful recipe! It was fun making these!
    If anyone's wondering about the sugar, I put 1/4 C of sugar for the ganache and it tasted as sweet as the usual French macarons, but if I were to make it again, I wouldn't add any sugar because it was well sweet enough! I think I would add a bit more pistachios for the ganache too, so you can taste more of the pistachios instead of the white chocolate.

    That's interesting! I noticed that you used one unwhipped egg white and one whipped but without sugar. Is there a particular reason for doing it this way instead of classic Italian meringue?

    Simply amazing how easy you make this all look. Just curious, though: I don't keep white refined sugar in my house, only raw turbinado sugar. Would that work just as well, or would the molasses content impact texture and/or taste?

    Hi Byron I have a question. Do you use two egg white for the meringue and 1 to bind the dry ingredients or 1 for the meringue and 1 to bind the dry ingredients! I am a pastry chef in training so your videos are so inspiring!

    Yumm pistachio is one of my favorite flavors for macaroons. I would love to see a taro or salted caramel macaroon recipe which are also two of my favorites. Will try this recipe since a lot of other macaroon recipes require almond flour.

    Hi Byron, I'm hoping you can help me with something. I make a delish rose and pistachio cake, but its not a light airy sponge, more on the dense side, like any nut cake would be. Im trying to figure out how to turn it into a light melt-in-the-mouth sponge, so I thought, instead of adding ground pistas to the cake batter, I could either add pistachio cream into a vanilla sponge batter, or just make a regular sponge, then add pistachio cream in between the layers. If I go with the former option, I need a good pistachio cream recipe, so my Q is: is there a way to make a pistachio cream without using white chocolate as you have done here?
    My second Q is: in your ganache does the white chocolate overpower the other flavours or is it just there to create a ganache consistency?
    Any thoughts you have on this would be greatly appreciated. Many thanks.

    Wow just wow! I love it so much im glad that i'm just found a channel with new things and the best ! I saw that you used a pistachio flour i've never seen it before in a maccaron i always wondered if its possible to put things other than almonds , i don't thing that i have a pitachio flour so i just buy a pistachio and blend it? And the gnach can you plz write in grams instead of cups ?

    Awesome recipe! One question: I don't have a candy thermometer. Can I make the meringue the usual way, i.e beat egg whites by gradually adding sugar, and whipping it to stiff peaks?

    Thanks - I`ve always been a bit intimidated by this recipe just because people have commented on how difficult it is to pull off well. Yours look perfect.
    Here in Istanbul, macaroons are so bloody expensive, so it`s a real treat.

    I would LOVE to try these but I have completely given up on macarons. I have tried 4 or 5 times in the past to make them but they have never come out right. But this looks soooo good THANKS BYRON

      Do try again, buy double the ingredients and commit! I tried making them my first time; the egg whites wouldn't whip! So, since I had enough for 2 batches, I tossed the bad eggs and started over, (googled what I might have done wrong...) and sure enough, corrected my problem and kept on cooking! Macarons are exceptional. I used nutella for a filling, so I could focus on making the macaron.

    This recipe looks easy to do.
    I would like to make Nutella macaroons, any suggestions? For the ganache, can I substitute for Nutella instead? And for the cookies, I could add cocoa powder...can you please do a how to video on how to make Nutella macarons?

    Hi :) when you made the syrup of water and sugar, the amount of sugar you poured in the pot looked more than 30 grams. same with the water. just wondering if i'm seeing it wrong.
