      We do not use pesticides. We keep our markets clean and sun is very hot.

      Markets are kept very clean in Trinidad. I have been to one or two other places in the Caribbean and South America where it is not the same.

    How many Caribbean people in the diaspora really know how to prepare the items on display...the way our ancestors did? I hope the Chefs will show the next generation (on UA-cam) how to prepare tasty and staple Trini foods using these items.

    and yuh see dat bottle seasoning yuh holding there sir, is DE best seasoning I believe mankind could ever come across! it's a crying shame our cuisine is not more widely recognize. But yuh know what! it may be for a good, because such flavorful green seasonings is so unique to Trinidad and Tobago that it keeps our food pure and unblemished. I love my Trini food.

    Loved this. Thank you. I was recently in Trinidad and wanted to go so badly to the market. Thanks for the green sauce recipe. I ate the best curried duck and dhal in Trinidad. Omg. I could never match it.

    Both the women chief from the beginning and the man chief at the end spoke very interlectual and educated. They both gave exceptional explanations on the different market ingredients and indigenous cuisine..

      If you ever do visit Trinidad and Tobago it is best to go around Carnival Season/time, you would get to know a lot more of the culture and the people there especially the food and music. A lot of tourists travel there at that time.

    To people who ask if Chardon Beni shadon Beni or shadow beni( known also as bhandhania or culantro) now come into existence , the answer is NO, it been there for decades, growing wild in the back of people yard,
    For people living outside Trinidad, shadon Beni can be brought at any international supermarket under the name CULANTRO not cilantro.
    It makes great blended green seasoning along with other green herbs and it also makes fish dish taste great

      All the videos of markets in Trinidad that you will see on UA-cam are clean. The markets are kept clean and not dirty like one of those I visited in the another Caribbean island.

    Eventually, we will begin to find more and more of carrebeans and Island fruits and vegetables supermarkets in South and Central florida because they are close geographically to serve the ones who enjoy international food markets.

    Lived in Port of Spain (PIARCO) for 15 months Was consulting for Caribbean airlines - Was excellent experience. I love to cook and was a regular at the market. The only thing I could not find was Coriander!!

      There is a shop on Broadway in POS where you'll find all different kinds of spices. Chinese shop on Charlotte St good too!

    The ignorance of The Culinary Institute of American is speaking. I would like to know what ingredients from Europe is he talking about. Habaneros are from Yucatan in Mexico and of course the Tomatoes are from Mexico. Trinida has its native ingredients too and should be given credit to.

    What`s wrong with the presenter? Apparently the "reporter" can't look his interviewees in the eye. He looks at the floor or the food and he doesn't seem very enthusiastic. Bad casting.

    Around 0:34 he says "saltfish season[s]... the Indian inflected dishes...". The narrator makes it sound like saltfish (salted codfish) are a food from India. Codfish live in the North Atlantic (NE USA, Newfoundland, Scandinavia, etc.) and salted cod was exported to the Caribbean as major source of protein there before emancipation and before immigrants came from India. That's why you have dishes like ackee and saltfish in Jamaica, coucou and saltfish in Barbados, and a bunch of other saltfish dishes in other Caribbean countries.

      Yes it is. My mom would make the best food. She was from Trinidad and so was my father. I remember my mom using green seasoning.

      @@ramondtango6117 Thanks. I usually stay in Petit Valley. When COVID is over and I visit, I plan to venture out to the markets in central and southern Trinidad for a different experience from the typical supermarkets. I would also like to bring back some condiments, a good iron pot and some mamey sepote if they are in season. Nothing is better than Trinidad's fruits which are so much better than apples, pears, grapes, etc.

      So much misinformation it's a shame! The slaves created the salt-fish and smoke-herring dishes. The fresh vegetables and fruits are grown in Trinidad not imported from Asia! As a matter of fact, most vegetables in Trinidad or the Caribbean are also grown in Africa not Asia as White-man said! Thank you,

      @@jameelkhan707 You fail to realize that our official language is English. I don't know which school you went to that you did not speak and read English in the classroom. The only other languages that I learnt in school was French and Spanish which was part of the high school curriculum. I thought that I should bring that to your attention.

      @@winstonseecharan6321 Trinidad is far from being a developed nation! Apart from some new highways, the infrastructure is deplorable! Many local roads are filled with potholes and road repairs are very rough. The water system is unreliable. Most sidewalks need repair. Corruption and mismanagement in the government is rampant!
      I'm a Trinidadian who lived in Miami, Florida for 25 years and recently returned home. I know what I'm talking about!
