@@nmpoy that is hard to find so I just experiment while making ramen broth. I am making a broth right now. It's a Chicken backs, chicken necks, chicken wings, chicken tenders, and mutton trodders broth. I also added leeks, Napa cabbage, lemongrass, an apple, cloves, black peppercorn, and bay leaves as aromatics. I will add garlic, ginger, and if the broth does not have strong enough of a onion aroma (leek aroma) then I will add scallions. InshAllah the broth turns out good. I am muslim too, so I was just trying to help out.

Is the lamb noticeable in the broth since you have more chicken than lamb by weight?

i do wish there were more ramen options outside of pork (haram for me), beef and chicken. lamb and goat meat is so much nicer than beef
Substitute pork for lamb and chicken and you will get a similar flavor
