      The double soup shoyu was my favorite. I will find out if this one is better tomorrow.

      @@KBGFilmz in my opinion. While this one was good the double soup recipe was even better.

    Still trying to figure out if it’s best to add dashi to the BROTH or the TARE . this channel (and others ) have done it BOTH ways smh

    I have made several of your recipes now, as well as others such as Way of Ramen and Adam Liaw’s and while those are good I think yours yield consistently the best ramen. Thank you for sharing them.

      You can but you will not get the same flavours.

    Made this tonight. Was delicious but very salty, maybe I used the wrong Soy sauce and incorrect amount of salt added. Noodles were great, I left the egg out of mine. Thanks for your recipe, keen to try your others.👍

    I have a Mara to atlas pasta machine, but am not sure if it could handle a lot of low hydration, alkaline noodle dough. Do you know where one could procure a cast iron and brass one like yours?

      The one I use is an old Japanese noodle making machine.
      Current and similar products are also available on Rakuten and Amazon in Japan :)

    How many bowls of Ramen will this make, I'm guessing about 8? Also do you give all your pork and chicken bones a pre-wash? Thanks, those looks delicious.

      hi thank you for watching!
      can take more than 3 liters of soup.
      The bones are used without pre boil. just remove scum :)

    What hydration percentage are the noodles? Not sure if my pasta roller can handle them haha
