    Ingredients
    2 pounds boneless, skinless chicken thighs, trimmed (about 8)
    1 to 2 tablespoons canola oil
    1 shallot minced
    2 garlic cloves minced
    1 teaspoon ground cumin
    1 teaspoon ground coriander
    1/2 cup low-sodium chicken broth
    1/2 cup lemon juice
    1 tablespoon parsley
    1 tablespoon lemon zest
    1 1/2 teaspoons salt
    1/2 teaspoon pepper
    1 tablespoon cornstarch
    2 tablespoons water
    2 tablespoons butter
    10 large basil leaves, washed, dried, and cut into very thin strips

    Thank you for explaining that the cornstarch slurry has to reach a boil to thicken! I never knew that, which would explain why my sauces never thicken! 😂 Thank you!

    I was confused for a bit...I thought this was lemon BASIL and then when you added parsley I wondered if you had substituted one for the other. 😅😅😅 Looks delicious! (I'll be making this for dinner later this week.)

      We added parsley as well as fresh basil at the end instead of cooking it. Enjoy!
