Christmas Perfect! Nando's Copycat Peri Peri Chicken | African-Style Spicy Roast Chicken Recipe
Served 4-5
------
Ingredient List
------
Peri peri sauce
---
Blend all the ingredients into a sauce
---
1 large yellow onion, cut into chunks
1 red bell pepper or capsicum, deseeded and cut into chunks
4 Thai bird’s eye chilli or African chilli, deseeded
2 stalks Chinese parsley
5 cloves garlic, peeled
1 tsp black pepper powder
1.5 tsps salt
1.5 tsps dried oregano powder
1.5 tsps paprika
2 bay leaves, remove spine
Juice from 2 lemons
2 tbsps olive oil or other cooking oil
Pre-marinated chicken
---
1kg fresh chicken
1.5 tsps salt
Other ingredients - optional
---
4 potatoes, cut into chunks
1 corn, cut into chunks
1 large carrot, cut into chunks
1 garlic, cut the top off
20g unsalted butter, softened
1 tsp salt
Important notes
---
Marinate the chicken with half of the peri peri sauce for at least 2 hours, but best overnight. The other half can be served as a dip.
It's important to note that if the marinade makes contact with raw chicken, it must be cooked before being served.
Wrap the chicken wing tips with an aluminium foil because they burn easily.
Place the chicken breast side up on the oven tray to ensure even cooking.
Roast the chicken in an oven for about 40-50 minutes at 200°C (392°F). For the last 10 minutes of roasting, raise the temperature to 220°C (428°F).
Ensure the chicken is thoroughly cooked before serving. When the chicken is cooked, the chicken's juices should run clear.
The duration for roasting chicken in the oven varies depending on factors such as the chicken's size, oven temperature, and whether it's whole or in individual parts. As a rule of thumb, add 10 minutes of roasting time for every additional 200g or 7oz of chicken weight. For instance, if roasting a 1.2kg chicken, cook it for 50-60 minutes at 200°C or 392°F. For a 1.4kg chicken, extend the roasting time to 60-70 minutes at the same.
Ensure the chicken is thoroughly cooked before serving. When the chicken is cooked, the chicken's juices should run clear.
To determine if the chicken is cooked, pierce the thickest part of the thigh with a knife or skewer and check if the juices that come out are clear (not pink).
Add the other ingredients to cook with the chicken towards the last 20 - 30 minutes of roasting the chicken, depending on how well done you want them to be.

Hi Carol, thank you for your kind words and great support. Come up and say hi the next time we meet and perhaps we can also take a photo together. Merry Christmas and happy holidays to you.😊
Hi chef, looks delish! Thks for sharing… wanted to ask if this can be done in a turbo broiler?
You can but turn the temperature down to maybe 140 degrees Celsius for 30-40mins. Do check on the chicken regularly to make sure that it is not burnt cause the heating element is very close to the chicken.
Hi, the recipe looks great. Can I confirm is chinese parsley coriander/cilantro? Can't wait to try this recipe.
No it's not. It's called Daun Saderi in Malay.
🍗👌🏻😋
So gonna do this. In fact i was thinking of doing this 😱🖐🏼. I used thighs for a similar recipe and brined it. Resulted in juicy chicken
Leaving it in peri-peri sauce overnight IS A BRINE
@@sheilahtaylor3005 oh
Is wondering if this works for turkey. A dipping sauce on the side maybe?
can we just use chicken parts instead (eg thigh bone-in) and how do we adjust the marination / roasting time?
You can, marination will still be minimum of 2hrs to 24hrs. As for timing, for example thigh, should be around 20-25mins in an oven.
Thank you. Will sure to do it for Christmas. What do you do with the whole roasted garlic?
I love roasted garlic but if you’re not a fan, you can skip that. Happy cooking!!
You can try mushing up the softened cloves sans skin and make roasted garlic butter for bread or as a dip with a little olive oil
A pretty chicken with saucy sauce.......😂 Have a Merry Christmas, Dimples, love you to the kettle and back ❤
Would you kindly tell me the brand of dark soy sauce you use
Do you need to cook the sauce?
Hi morning Roland…. May I know the roasting time for a chicken in 1.8kg?
I think you will need about 1.5hrs, at around 180 degrees Celsius, do move the chicken around in the oven occasionally in order not to burn the skin. Do use a stick to poke the thickest part of the chicken when the time is up, the juice should run clear, if not, roast for another 10mins or so. Do make sure that the chicken is out of the fridge and rest to room temperature before you start to roast it.
@@spicenpans ok than I need to basting for how many time?
Is Chinese parsley the same thing as coriander or cilantro?
Yes you’re right. Happy cooking!
Roland may I ask the chicken can I marinate for 2 day?
Sure. No problem. Have a great party, Alice.
Tq Roland!! Same to u…. Merry Christmas!!🎉🎉🎉
Please do sizzling tofu
Hope this helps

Hi chef Roland, please make scissors cut curry png.
Do you not need to cook the dipping sauce?
No.
Yes, if the dipping sauce comes into contact with raw chicken.
