    Made 13 breakfast meals and 60 sausage balls yesterday and 30 breakfasts the day before along with some 16 burrito pizza rolls for lunches. Thanks to your encouragement!
    5 of those meals went to the hospital for a family sitting with one of their 6 week old twins.

      I love blessing people with food I have made. I have an elderly couple next door. He suffers from many medical issues and she is his care giver. I try to make extra food and take it to them just to lighten the burden a bit.

      @kimpollard6021 , the Pizza Burritos are something I made up. I take different size tortillas, depending on the age of the person eating them, and put a layer of cheese. I place them in an oven heated to 250/300 while I put cheese on another tortilla. When I pull out the tortilla from the oven I can add pepperoni, sausage, or a combination of them. I avoid veggies as they tend to make it soggy. The melted cheese holds the meat and seams it as I roll it up. I don’t roll like a burrito but just a long, moderately tight roll. These can be eaten hot or cold from fridge and cut in half or thirds and dipped in pizza sauce.

    Hi Becky - love your channel ❤ Whenever I have guests over and I need to fry a lot of eggs, I just spray a 12 cup muffin tin with Avo oil, crack the eggs into the muffin tin and then bake them in the oven (400F) to your preferred taste. It literally takes a few minutes to do a dozen eggs at a time. Lots of love from Cape Town, South Africa. 🥰⚘

    I know that everybody knows French toast as a sweet dish, but in my country, we eat it only salty. We crack a few eggs, salt, pepper, paprika, a little bit of milk, but really little, and then the bread goes in, and then we fry it in a pan in some oil. You might add cheese on it right after frying them, so it melts. We drink hot tea with it

      I don’t always like a sweet breakfast so I also sometimes make a savoury French toast sometimes. I add finely chopped onions, garlic and fresh coriander, along with salt and pepper and any other spices I might feel like adding. Love it!

      When we married I thought that my husband was a terribly picky eater my family lads as well as lassi were all good in kitchen and we enjoyed cooking so much more than half became respected chefs.
      I was shopping and saw a fantastic deal in our local butcher for beef cuts from his family farm ( were Scottish so home fed Aberdeen Angus beef) i included rib eye and rump steak.
      I decided to cook rump steak that evening and when he called me to arrange to pick me up I told him he said he didn't like steak at all!!!
      So he got beef pie I had a steak. When I placed up he looked at my plate said thought you might having a steak I just looked at him cut a piece let him try Tues who are that pie.
      I later discovered that his mother was a terrible cook .
      He was always so thankful to eat my cooking he still is but these days he joins me in the kitchen and guess who normally cooks any steaks we eat.

      @@raquelsalmones7485 She frequently mentions that he does a lot of the cleanup after she does a big cooking session. He also cleans other parts of the house...he has his own vacuum cleaner that Becky has said she never uses! They are a great team.

    Becky, I also make the egg muffins to freeze, and I also put them back in the muffin bag to freeze. The only difference is that I wrap mine individually in parchment paper, not the plastic wrap. The reason being is you can just take it straight out of the bag and heat in in the microwave in the paper. 😊

      I’ve wrapped in parchment then plastic to seal well
      Toss the plastic when u take out to nuke or even nuke with the plastic on the first minute as it’s not touching the food!

    Becky did you know you can turn those egg shells into calcium powder for your tomatoes and orchids. All you have to do is rinse the inside of the egg shells put them in the oven to dry out and get brittle. When cool put them in your blender and pulverise them into a powder. I use my magic bullet to do mine. I have a large jar I store the powder in. It builds up over time and when it comes to planting my tomatoes I put a tablespoon of the powder in the hole before I plant my tomatoes. It stops tomato end rot. I also sprinkle it on the base of my orchids and it increases the blooms. Rice water is also good for orchids.

    It hit me again today, watching this video.....I really appreciate all of the 'background' and real life stuff that you include in the videos. I like that you show what it really takes to do these full cooking days. There is a lot of prep work and clean up. Most channels don't show that part. You keep it real and I really appreciate that!

    I use my mother in law's waffle recipe. She mixes the egg yolks in as usual, but she beats the egg whites until fluffy and folds them into the batter. It makes the texture so light, yet slightly crispy on the outside taking them to a whole new level.

      My great auntie used to make her famous waffles this way, too! They were loved by EVERYONE because their texture was so perfect & delicious. The little bit of extra work beating the whites to fluffy makes all the difference.

    Becky this is why your channel is my favourite. So as a Caribbean person and a Trini, we think Americans can't cook, but I tell my friends you cook so well. You taught me how to make oat flour today...thank you so much. Loved this video and I'm excited to try the breakfast cookies and the pumpkin, banana waffles in particular. And then Josh's excited praise of your Mc Muffins, was for me the highlight of the video. 😊🥰

      I'm American. I cook probably more then Becky. It's only a few city people who don't really know how to cook in my experience (4 states, 6 towns, 2 countries), and a lot of that changed during the pandemic too. Cooking seems to have become a lot of peoples passion the last 3 years

      @@YasuTaniina what I really meant was that Becky seasons her food well. In the Caribbean salt and pepper are not considered as seasoning food. Becky uses a lot of spices and herbs like a Caribbean cook. She always impressed me with her love of flavour.

      I think it’s terminology. When we say season each layer, that’s salt and pepper, which are basic seasonings in almost everything. Then we flavor with spices. That’s all your other flavors ie; basil, oregano, red pepper, garlic, etc

    Hallo Becky. Congratulations on 400 videos. This is 401. I was late on your previous video. I've started watching your videos from the first and have not catched up, but with every new video, I love to watch the new one first. So, I'm about where you had the snowstorm at the old house, after you bought those beautiful plants. I nearly had a heart attack when I realized those plants were still outside. I'm living in sunny South Africa and have only experienced snow once in my 60 years. What I'm very anxious about after your latest snowstorm is to know how your chickens are doing? I saw they were ok. Where do you keep them when it is snowing? You have such a positive personality and are addictive following. Keep up your journey. I'm rooting for you. Love ❤️

    When freezing waffles and french toast, I always freeze them flat on a sheet pan , typically on a rack. Once frozen, you can foodsaver them without crushing/smishing the bejeesus out of them. Makes them flatter and easier to stack or stand in your freezer. Give yourself grace when you don't always push through. You are doing amazing!

    Try adding cinnamon to your custard for your French Toast. It adds a small amount of sweetness with no sugar. Love your videos. Michelle

      We use cinnamon and half nutmeg! Sometimes added Apple compote for topping! Yum!

    For a tropical spin on French toast, try Hawaiian sweet bread/rolls and substitute coconut milk for the regular milk/cream. Pineapple or guava jam thinned with a bit of pineapple juice also makes a great syrup.

    I love watching you Becky! You are a little energizer bunny. Your food looked awesome. It's really nice that Josh brags to you how good something is. I always look to see if you have put a video up everyday. I so enjoy them. I have gotten a few friends watching you as well. 4 ladies from church and myself are meeting at church tomorrow to make your homemade pasta. I am blessed with an abundance of chicken and duck eggs from my girls. I get so many that I have been blessed to share close to 80 dozen now, plus sold 7 dozen duck eggs since January.     Becky - I would put parchment paper between the waffles before freezing , it would make it easier to separate only the number of waffles needed for breakfast

    Becky I use canning rings that keeps the eggs in a round shape I use the wide mouth canning jar rings.

    Use a muffin tin to bake the eggs. They come out perfectly round to fit on the muffin and the egg is cooked thru since you dont like runny :)

    French toast for the freezer is the best prep ever! They are so good if you just pop them in a toaster to reheat them!

    I've started cooking French toast in the oven. I use a large cookie sheet lined with parchment paper and can cook a dozen or so slices at a time, so the entire family can sit down and eat breakfast together, instead of mom cooking continually while everyone else eats.

    Becky, our daughter bought us a Breville waffle iron for Christmas one year. It is awesome! Beeps when ready for dough, beeps when they are ready according to your setting for doneness, very easy clean up. Love it!! Love your channel!

      A lot of recipes you can substitute the pumpkin for puréed sweet potato if you can access to that. It’s not a pre made product like the pumpkin is usually. You just make your own mashed sweet potato and blend it up really smooth.

    We always put nutmeg, a pinch of salt, and some sugar in our French toast recipe. Sometimes we substitute cinnamon for the nutmeg. It’s yummy. With waffles, we separate the eggs. We beat the whites till they are stiff and fold into the batter. It makes for a very fluffy waffle.

    Thanks to one of your previous videos, I doubled my batch of buttermilk biscuits last night and stuck half of them (unbaked) in the freezer. I popped two of them in the air fryer this morning just to see how they would do, they baked up beautifully! It's gonna be so nice to have those ready to go (along with meat and veggies I've been canning) for days that my back is hurting too much to stand up and do a lot of cooking.

    Becky. I think you can order a griddle for the center burner on your stove. My stove came with 3 grates and I ordered the griddle for the center.

    Just a thought some thing I do that’s helpful when freezing, if you flush freeze them individually on a baking sheet, then you can put them in your silicone bags without them sticking together, so you can just pull them out one at a time when you need them.

    An idea for whoever wants it, when I prep freezer breakfast sandwiches, I whisk up my eggs in a bowl with cream or milk or cottage cheese and then pour into a 9x13 and bake for about 10-15 minutes at 350. They come out so fluffy and it's easy to cut them up and put them on thr sandwiches!

    I wish we could smell them too! The egg muffins look yummy too! I have never thought about cooking the sausage in the oven. It looks good. I wish I had more freezer space!     Cuisinart double waffle flipping maker round waffles. We love our waffle maker. It makes two waffles simultaneously and cooks them perfectly and beeps when they are done. Awesome!

    I'm not sure if anyone has mentioned this already but if you don't like having to buy a disposable product like parchment paper, you can line your pans with silpat mats. I still use parchment for some things but the silpat mats save money and they take little to no time to clean up and the food/liquids slides right off.

    I think I can see why you like to cook. Josh is always so nice, and tells you that everything is so good. My husband has never told me anything that I make is good. I am really not a bad cook. So, that is why I do not like to cook.

      I've done a breakfast aioli with mayo, Dijon mustard, and some real maple syrup (amounts to taste) with sausage egg and cheese sandwiches on waffles - a little sauce adds just right the extra flavor

    I’m going to try those pumpkin waffles! I bought an inexpensive Cuisinart waffle iron, it’s the best one I’ve ever owned. I use my Danish dough whisk all the time!

    Hi Becky! I instantly paused the video and made the breakfast cookies. I also added a scoop of protein powder and added the chocolate chips. Smells wonderful! Also, I make a mixture of half water, half peroxide, and a couple tablespoons of dish detergent in a spray bottle. Spray on baked on messes and it comes right off. Thank you!☺️

      I use that mixture for stains on clothes, even took out lipstick. I also use it when my chicken scratches me. It burns for a sec but cleans the wound. It heals up with no infection or trouble.

    When the holiday season comes around, I enjoy substituting egg nog for the milk in my French toast. I usually add cinnamon and nutmeg to the egg mix before frying it up too. Such a fun twist on a family favorite around Christmas and Thanksgiving time.

    Hi Becky, we have used pumpkin bread, zucchini bread and other delicious breads for french toast. I have not thought of putting pumpkin in the custard though. Enjoyed watching your show.

    I've been making those kinds of English muffin breakfast sandwiches for year. I've always called the a "McMom". LOL
    When my kids were little I would make a peanut butter and jelly sandwich and then dip and cook them like French Toast. The kids loved them.

    The best method I have found to cook the eggs is to scramble them up, add some milk and pour into a glass baking dish or cookie sheet and bake for about 15 min on 350 degrees. I usually do 10 eggs to 1/2 cup milk. I also add some salt and pepper.

    Have you ever made sheet pan eggs (scramble and then pour on a parchment lined cookie sheet with sides) cook about 325 until done (15 min?) slice after it cools a little. I made breakfast burritos with those. I plan on doing it for English muffin breakfast sandwiches. Life changing :)

    Another amazing cooking video! You are amazing in the kitchen! 30 eggs? That's good! Are your chickens laying eggs regularly everyday again? I just posted (this Friday) about how I got mine to start laying again and super healthy (if needed). You never cease to amaze me when you are cooking up a storm, and I know you use a lot of eggs for good reason! It's so exciting to see how the house is coming along, the yard etc and all the hard work you too have put in, all while raising your sweet Baby Acre. I'm so happy for you three!!     I never even thought about cooking breakfast sausage in the oven! I've always done bacon in the oven, but not sausage. Also, your Dutch baby recipe has been a game-changer for me. I work from home and occasionally love to have pancakes for breakfast during the week, but don't like to have to stand over my fry pan flipping pancakes. The Dutch baby comes together quickly and I can throw it in the oven while I'm attending work meetings or doing projects - plus it more than satisfies my pancake craving! 😊

    You can use a hamburger press to press out the sausage. You can use a toaster to toast the English muffins and brush them with melted butter.

    I have a double side Waring Waffle iron and it is great, Makes round waffles that are scored into quarters. We love it, and with a big family it make waffles fast. Perfect for meal prep I am sure.

    Hey Becky! I have been quiet for a while, but I watch every day. The breakfast cookies look amazing. I used some home canned peaches from 2021. They are in the oven now. I always find inspiration from you for my kitchen. I have pre made breakfast sandwiches for my husband. I have laxed on it for a few months, and he keeps dropping comments of how *spoiled* he used to feel. Guess we know what I will be preparing after the cookies are done. ❤ What a blessing to be able to do these things.
