Well done Keef. Cooking them today. The old 97 year veteran was delighted when I told him what he was getting tonight. He loves kidneys , steak and kidney pies Canada thanks you. Especially with all the snow falling and cold weather.
I'm so glad someone is still cooking offal. I love devilled kidneys. Looking forward to more offal videos - liver and bacon, tripe and onions and, maybe some liver and lights?!? We're having savoury ducks for our tea, tomorrow! Keep up the good work!
I made this when in my twenties, about 1974/5 ish and I have not had it since. I cannot remember anything except that I do not think my then wife at the time was terribly impressed with the washing up to do but yours seemed quite retrained. At the obvious commendation of the official Keef Cooks Taster and senior Manager I may try this again. Need to get some Kidney though it is Steak and Kidney thingies time of year so: Thank you.
So pleased I've found this video, im trying lamb kidneys for the first time since my nana put me off them 38 years ago but since turning to a carnivore diet for health reasons I decided to leep right in and eat the whole of the animal and lamb kidneys are on todays menu ... thank you so much
A wonderful meal. I actually enjoy it best in the evening. Personally, I never cut the kidneys in half. Also, a dusting of flour. The gristly bit really isn't a problem. They've got to be fairly rare- that bit of bloodiness soaking into the toast is a much nicer treat than it sounds! I;m glad people don't like Offal- it keeps it cheap for those of us who like it!
I just ate free-range Venison kidney for the first time and they`re beautiful, smaller than these ones too..I got them from the Knepp Estate Rewilding place in Sussex....75p each
Keef (Keith) I'm a new subscriber, I ventured across here c/o Chris The Butcher. I really enjoy your videos and the great range of your culinary skills. I'm gradually working my way through your archive, and I must say that everything I've seen thus far has been of the highest order. Keep up (or should that be Keef up) the good work!
These comments here. I love all offal (haha) and this is for sure something I'll try. The milk bath helps break down certain enzymes in the meat. Isn't neccessary but learned to do it when couldn't get my kiddos to eat them. I might get to the Mexican grocer and try this today. Will beef kidney work fine?
Meant as a joke, no doubt, but I finally gave in to the chopping board colour police a few months ago, so now I make sure I use the blood-smeared red board whenever I chop raw saladdy stuff now. Bwuhahaha!
@@Keefcooks joking indeed. Always makes me wince when I see a blue or red being used instead of a green 😂 the thought of the health and safety guy walking into the restaurant kitchen just as someone's using the wrong board is still a scary thought to me 😂
Not only is he the only UA-camr I have seen that can pronounce Worcestershire correctly, but he also has the correct brand. Hendo's for the win. My only change to the recipe is to add mushrooms instead of some of the kidneys, it makes it a bit lighter on the stomach, or makes the kidneys go further. That and a bit of red wine and a dab of tomato paste.
What! What the F is Hendo's? Lea & Perrins is the Original Worcestershire Sauce. From Worcester. Since 1837. Not 1885. And where are the anchovies? Hendo's is some sort of "Relish", apparently. Not Sauce. And definitely not Worcestershire Sauce. You may prefer it - but that doesn't make it Worcestershire Sauce. I am loathe to say imitation - let's just say latecomer...
@@Keefcooks I am merely OUTRAGED by the substitution of the GENUINE Article with some sort of pale imitation. Actually I've never heard of Henderson's Relish, in spite of my Great Great Grandfather living In Attercliffe Cum Darnall from 1881 to 1901. I am very jealous, actually. My wife won't let me cook devilled kidneys, as the smell of them makes her throw up. I haven't tasted them for 20 years.
I'm a new subscriber, but have been watching your excellent videos for some time now. In relation to kidneys (see the comment on the earlier video for steak and kidney pudding), I agree that they should be soaked to get rid of that lingering 'peey' aftertaste. My ex-wife used to soak them in vinegar overnight.
Corr yeah, love this. I’ve gone Keto past month (and lost a stone) so barring the bread this is right up there on that diet. How I miss bread, especially the tiger loaf. Grrrrrrrrrr 🐯
My birthday breakfast dish! Quite why it has taken me so long to find your video is anybody's guess but I have. I have a bottle of Handos AND some L&P. Oh the agony of choice💥 Good video and even better food. BTW I'd go with fried bread rather than toast...
Love all things Keef, but I don't believe I could eat a kidney if my life depended on it. They're not popular on this side of the pond. Thankfully, we have myriad other comestibles to choose from here.
Having got half a pastured lamb for the freezer, I also got some "excess" kidneys. They're great... no matter that I'm also on the other side of the pond. I will have to try this recipe.
Ralph The Bulldog that’s too funny 😁 I did a short anatomy study class in school and that’s was it for me 😳 dissecting livers hearts lungs and eyes I was done ✅ Congratulations on the transplant hope you are doing well 👍
If the anti rejection drugs ever cause blood cancer, a bone marrow transplant from the same person can eliminate the need for the previously mentioned drugs.
These (kidneys, kedgeree, kippers) are simply dying out. As recently as the 1980s they would appear in student cookbooks as 'budget' meals. Now that I have nephews and nieces at university, I know them well enough to realise that they are dishes that they simply will not eat. In a space of a generation, they have simply disappeared from most peoples' repertoire. My favourite ever dish comes from the Beetle & Wedge restaurant in Oxfordshire where they served a plate of kidneys, black pudding, sweetbreads in a cream & sherry sauce with a rosti. It was to die for (but it's easy to make at home).

Now shes asking for it for her birthday meal.

Aww that's so sweet he scuffed up the plating, clearing giving more to one than the other, but he gave his wife the larger plate. What a sweetheart!

Do you guys have a wedding 👰 picture? I’m American. So, it is very doubtful that I will ever make or eat this, but I enjoyed watching you.
I am also, and I make it. Just go do it!
@Nannerchan - our wedding photos are terrible, official photographer let us down.
Fantastic lunch idea. Lovely.
Used to have this in the Royal Navy and on fried bread not toast..Navy called it 'Shit on a Raft'
That's very picturesque lol
Here in America. I heard the guys in the service would call cream chipped beef, Shit on a Shingle! 😁 Similar I'm guessing.
MS Keef Cooks is a hoot
I haven't made these in years. Will have to address that. Looks amazing.
I love kidney, never had this before but it looks absolutely delicious, I have got to give this a try Thank you, for sharing Keef, :-)

Entertaining and witty. Fun lady
Fantastic! Thanks for doing this.
You're welcome!
Nice one Keef delicious - Cooking things like kidneys suddenly became bad by the media but they taste so so good
I had Liver bacon boiled onions and mash potatoe yesterday. I still have to get my neighbour to cook them for me.
It's a texture thing I cant handle.
Ive only ever had kidney in a pie, this looks yummy!
I’m gonna make this!

I've only got one question, as follows: what makes them "deviled"???
