A Persian dish so close to my heart that reminds me of both of my grandmas. They’re no longer with us, but they both would make these for me as a child and it’s a dish so nostalgic to me 🙌
Here I’ve made my own vegetarian twist on it that I can’t wait to share 💚

There's an Indian version called Cutlet in India too:)
Usually vegetarian cutlets does not contain egg. But non veg does
There's all versions of cutlets veg cutlets, paneer and chicken
Cutlets have origins in middle east only. Actually most of Indian food we eat today has middle eastern origins.

My grandmother is Polish and this was how she made potato pancakes (without the chickpeas). Grated potatoes and onions, mixed together and breaded and fried. Eat it with a baguette and tomatoes and sour cream, or on it’s own dipped in sour cream. I love how so many cultures share similar dishes, but with their own twists. It really goes to show how prehistoric peoples from those cultures may have interacted with eachother leading to such similar dishes. A lot of Central Asia and Eastern Europe got big pieces of their culture from India and Iran, apparently.
We make the same in other slavic countries

We make Draniki in our slav countries too, this dish isn't specific for Persians nor other cultures

Never seen Iranian kotlet made with chickpeas. Usually there is ground meat. But I guess if you’re vegan/veggie that would be a good substitute!

In morocco we call this dish mâakouda , very popular in my country and so yummy with moroccan harissa

In India it's cutlet or Allo tikki
Yum!! It’s like Indian Aloo tikki but that is a simpler version. Just boil potatoes, mash with wet bread or mix in flour, add herbs and spices, shape into cutlets & shallow fry. Can ve stuffed with paneer crumble or lentils also. Serve with tamarind chutney, coriander and mint chutney & yoghurt. Can be served with chickpea curry also (called tikki chholay)

Kotlet in poland typically refers to what you made but made from meat :)) so i have had some form of it from another background.

But it's not how we cook kotlet

@@charlieross4674as you may already know, theres a revolution happening in iran. 3 years ago on jan 3rd, trump bombed one of the highest ranking IR officers (he killed so many people he was a terrorist) and he basically got ‘fried’ to death. so ever since people have been joking that he turned into kotlet (the dish Ayeh made in this video) because it requires frying. last week on jan 3rd a chef on instagram posted the recipe for this food and he got arrested for it. the islamic republic agents are arresting, killing and executing people who just want freedom.
I think it's a universal dish cauz we have our version too here in Morocco

I am a Persian 76 years old and don’t remember this recipe at all ! We make potatoes and ground beef onion eggs that we call kotlet ! We do the same with chick peas and ground beef eggs , even raw potato and onion and and ground beef ( Turkish kotlet ) but your’s with out beef ! Chick peas and potatoes 😮 of course I was born in Tehran and left 52 years ago and have no idea what the other part of Iran eat 🤷🏼♀️I can’t eat any of this kotlet because of diabetic and they have lots carbs ! But boy they are delicious 😊
Just spread a spoon of Tahini or Hummus on the pita bread before adding the filling. It'll take it to another level.

In Turkiye, we do it a bit differently like adding zucchini into the mix and not using the crumbs. We call the dish "mücver".

we have something like that in Tunisia but we do not put chickpeas with potato we use ground meat and some modern versions they use ground chicken we call it mbatenmeans the fat thing

We got that from Russian Armenians who fled Russia into Iran. I can’t recall the reason why they left. But I had an aunt who was Russian Armenian and she made the best cutlets.

Not even close but kinda similar. In Mexico we eat rolled fried tortillas with mashed potato and chorizo mixed inside. It’s called a flauta/rolled taquito.

We usually eat these with pickled vegetables or with a variety of yoghurt sauces.
@@zf2023 Your name is Persian so assume you know what "mast khiar" or "borani" etc are and that non-Iranians would call them "sauces". When you mix yoghurt with different veggies, garlic, spinach, or aubergine etc you can call them "sauces" or "dips" or whatever.
@@zf2023 and btw khoresh consists of "sauces". Khoresh is the base of Persian cuisine. When someone says "sauce" they normally mean something juicy/liquidy that you can add to the dish. Ketchup is not used as a "sauce" for Iranian dishes. We use pickles (different types of "torshi"), yoghurt sauces and dips (borani, mast khiar, mast checkidé etc) or stews instead.
The patties in this video are a SIDE DISH. So if you like mayo, hot sauce or whatever, you can use it as a "sauce". But neither ketchup, mayo nor hot chili sauce is part of traditional Iranian/Persian cuisine. However, yoghurt and pickles are.
