    În Romanian we call that white cheese”caș” as well!!! Our traditions are also based around sheep herding and “Transhumanța” is the thousands of kilometres journey shepherds used to travel each year. A very popular boy name in Romanian is “Răzvan/Radu” which from a chat with a Iranian taxi driver in Bucharest I understood is literally translated to “boy” in Iranian. So many connections! Lots of love from Ireland and Romania!

    I live in western Turkey and I love Iranian food. It’s such a shame that although we are next door, it hasn’t flourished here as much as it should have.

    My family are originally from south of Iran and I watched this video with my 80 years young mother and she start make compression between what herbs we have in the south and north. I would say that home made village food cant be replicated in large settings because of ingredients and time consumption and to try doing that in America is a challenge. Restaurants wants to do quick and serving many at once.

    My across-the-street neighbors during my teen years were from Iran and there was ALWAYS an amazing array of aromas emanating from their house. I hung out as much as they’d let me. Babysitting was easily translated into a free meal 🥰🤤
    ps, I grew up in Sacramento and, being pretty close, would love to dine at Komaaj on my next visit back home.

    I am so glad to see this video. I always wondered why Iranian restaurants in Los Angeles only have kebabs, rice & same stews almost like a chain restaurant, all the same. I will come to Komaaj when I go to San Francisco next time. ❤

    We are absolutely foragers. I remember my mother and aunts doing wonders with milk, dates pomegranates and herbs and we come from the fars region and persian gulf. It's sad that restaurants only stick to the kabob and 2-3 khoresh frame. I crave a tamarind fish stew. Would love to taste more flavours from the North.

    Learning is power, and your history is how it once was,bring traditions back helps you see what made food great in the past can happen in the present learn the old way will help you understand what makes the ingredients so great.you have to love what you’re doing and understand, and then you’ll realize what makes your recipes so great and perfect meals

    We have similar green herb salt in Himalayan states of India, burnt walnuts to flavour the meat and to add dark colour and use of dried pomegranate seeds we use in northern India. I guess when there were no barriers and boundaries, food ideas travelled along with people. I find Iranian food to be very different and good quality.

    I enjoyed this video immensely. Please try to give the correct name for Borage. Borage has blue flowers and the plant in the video has pink funnel shaped flowers. I am sure there is an expert in Iran that can give the botanical name of the plant. The men in the video acknowledged the importance of the Iranian female cooks and their knowledge but once in the U.S. little video time is given to the females. Male dominated conversation is not appreciated in the modern world. I am very glad your wife has been able to finally join you in the U.S. Maybe she can continue to enhance your cooking skills.

      It needs to sit as long as possible. 7 years and 30 years are 2 of the major milestones, but you should be able to use it as soon as soon as 1-7 years but you can cheat by boiling the whole thing for 20 minutes and have it ready in a month. Also don't forget to add a bit of salt to the mixture. You also wanna leave it in a sunny spot for better flavour. Tarragon can enhance the flavour too.

    Fine documentary if it wasnt for the blatantly obvious sound issues. It would not hurt if the narrators voice could be clear and crisp and the background noises reduced, otherwise a wonderful story, the random white guy talking about food techniques kinda threw a curveball into the otherwise beautifully stringent audiovisual experience.

      باید یه چیز با ارزش مثل زعفران خاویار باشه که بصرفه چون هزینه ارسالش خیلی میشه !!!

    Persian cuisine is when the feast begins with our eyes, then enjoying the aroma via nostrils, and slowly experien ing the explosion of flavors that are accompanied by digestion and absorption resulting comfort and relaxation ...
    We consume so much green herbs either fresh, dried, or in pickled vegetabkes that you can not find in any other food culture.....
    We do not over spice or make spicy food so that we can taste each and every ingredient..
    We have the outmost varieties of Tasteful and nutritious appetizers like nun paneer sabzy combined with sliced feta cheese, persoan cucumber, and tomatoe, and dried soaked walnuts and almonds, healthiest light and heavy soups, very delicious and beautiful rice mixes, stews, and cleanest Kebabs types are well-done, tender and juicy
    So as jam, pickled, and particular sweets such as unique baklava
    Our feta cheese, plain yogurt, and kashk, and of course non carbonated doogh are the healthiest drinks...
    The herbal tea and different
    دم نوش
    That are most soothing for almost all ages during and after meals such as mint, camomile, borage, چای ترش, so as our sherbets like sour cherry, behlimo, sekanjebin, bidmeshk, Saffron, Golab, and so on
    Without any doubt and exaggeration....
    Something we should be so proud of our food culture to promote and talk about

    I clicked on something but is it about food or anthropology. Iranians have a home cooking culture thats why the food is underrepresented. They also look down on anyone who works with their hands in restaurants. When I went to Iran as a vegetarian and only eat at restaurants because my mom is too lazy and rich to cook, I almost you died eating meat again because most of the restaurants have the same menu or kebabs. That's not even 20% of Iranian food.

    Outside of the northern Iranian tropical forest, I havent seen that much variety of cooking. Its mostly the same recipes. Drying herbs and fruits or pickling is the main form of preservation. Europeans deli meat, sausage and cheeses have better preservation techniques for that stuff. Please make some Iranian mortadella varieties with herbs and garlic. I'm tired of seeing imported Italian sheet in Iran.
