I would say that home made village food cant be replicated in large settings because of ingredients and time consumption and to try doing that in America is a challenge. Restaurants wants to do quick and serving many at once.
My across-the-street neighbors during my teen years were from Iran and there was ALWAYS an amazing array of aromas emanating from their house. I hung out as much as they’d let me. Babysitting was easily translated into a free meal 🥰🤤 ps, I grew up in Sacramento and, being pretty close, would love to dine at Komaaj on my next visit back home.

We have similar green herb salt in Himalayan states of India, burnt walnuts to flavour the meat and to add dark colour and use of dried pomegranate seeds we use in northern India. I guess when there were no barriers and boundaries, food ideas travelled along with people. I find Iranian food to be very different and good quality.

It needs to sit as long as possible. 7 years and 30 years are 2 of the major milestones, but you should be able to use it as soon as soon as 1-7 years but you can cheat by boiling the whole thing for 20 minutes and have it ready in a month. Also don't forget to add a bit of salt to the mixture. You also wanna leave it in a sunny spot for better flavour. Tarragon can enhance the flavour too.

It would not hurt if the narrators voice could be clear and crisp and the background noises reduced, otherwise a wonderful story, the random white guy talking about food techniques kinda threw a curveball into the otherwise beautifully stringent audiovisual experience.

I clicked on something but is it about food or anthropology. Iranians have a home cooking culture thats why the food is underrepresented. They also look down on anyone who works with their hands in restaurants. When I went to Iran as a vegetarian and only eat at restaurants because my mom is too lazy and rich to cook, I almost you died eating meat again because most of the restaurants have the same menu or kebabs. That's not even 20% of Iranian food.
Outside of the northern Iranian tropical forest, I havent seen that much variety of cooking. Its mostly the same recipes. Drying herbs and fruits or pickling is the main form of preservation. Europeans deli meat, sausage and cheeses have better preservation techniques for that stuff. Please make some Iranian mortadella varieties with herbs and garlic. I'm tired of seeing imported Italian sheet in Iran.
