This is how my mother from Newfoundland, Canada made this pudding. So many recipes make a syrup of brown sugar and water but mom always spread the brown sugar over the batter and then poured over the boiling water. She always used eggs in the cake layer too because a cake without eggs wasn't really cake in her estimation. It looks so good I'm going to make it very soon!
