    Butterscotch Pudding Recipe
    • 3 cups whole milk
    • 4 tablespoons organic cornstarch
    • 1⁄2 teaspoon fine sea salt
    • 6 tablespoons butter
    • 1 cup dark brown sugar or Sucanat
    • 5 egg yolks, beaten
    • 2 teaspoons vanilla extract
    Whisk together the milk, cornstarch, and salt. Set aside. Melt the butter and sugar together in a medium saucepan. First, the mixture will be granulated, then go through a stage of separation before it finally comes together. Stir it constantly throughout this whole process.
    Once the mixture comes together and starts to barely bubble, slowly stir in the milk. You’ll see some chunks of sugar in the milk at first, which is fine. Continue to whisk and stir over medium heat until all the sugar dissolves and the mixture thickens.
    Pour a small amount of the thickened milk and sugar (about 1⁄4 cup) into the beaten eggs as you continue to whisk. Repeat this several times to gradually heat the eggs without scrambling them. Once you’ve incorporated several cups of the hot milk into the eggs, pour everything back into the saucepan. Bring it to a boil and keep it there for one minute while you stir constantly.
    Remove from the heat, stir in the vanilla and strain through a sieve to catch any rogue bits of egg. Spoon into small bowls or ramekins and chill for at least two hours before serving. Top with whipped cream if desired.

    Hello from northern Sweden! We are a multi generational family on a farm just a few hours from the Arctic Circle. We still have snow so today we thought it would be the perfect time to try this pudding. It is the BEST butterscotch pudding we have ever had! We have dairy cows that give a high percentage of cream in their milk (a little like Jerseys or Guernseys) so the only change we made was to substitute some of our cream for some of the milk. If you were here we would throw our arms around you and shout "Mycket Bra!!" (Super Good!). Thanks for a wonderful classic recipe. 💞💞

    I started cooking at age 8.
    I had undiagnosed learning disabilities.
    Some recipes, I can never forget, but cooked pudding in a pan on the stove in the 1960''s , when for me it was nice to have the box to read as a refresher.

    I've made this recipe from your cookbook so many times and we love it. We've also added cooked rice for a butterscotch rice pudding. You can also use coconut sugar instead of brown cane sugar - yum!

    I had to Bookmark this video because I LOOOOVE Butterscotch Pudding!! And your recipe sounds soooooooo good! :)
    While watching, I kept finding myself laughing either about what you were saying or about that darn goat in the back of your truck. Lol.
    Your goat reminded me of a particular chapter in my life that makes me smile to this day:
    Years ago a neighbor friend had bought 4 baby goats from an auction that were way too young to leave alone in his barn. (They still needed to be bottle-fed every so many hours but nobody lived on the property.)
    So a fellow "horse stall renter" and I gathered up the 'kids, putting them into my Geo Metro. Then we smuggled each 'kid' under our coats into my rental home so the neighbors wouldn't see...penned them up in my kitchen...and took 'shifts' feeding them every so many hours until they grew a bit and didn't need so much care. Then we had to smuggle them out of the apartment, back into that Geo Metro, and then back to the barn. Not an easy task since they had done quite well in the "growing" department! :)
    Those were the happiest...and noisiest...little goats I've ever seen, especially when they finally grew large enough to be able to jump out of their pen and head for the hills...which, in this case, was always the stairs leading up to the bedrooms. Lol.
    SMH...the things we do at times. (I'm betting the neighbors knew! Lol.)

    And I hope your 'kid' didn't pee in the truck. Lol.

    thx always, love that your sugar jar looks just like mine - eating raw unrefined for yrs and everyone asks about the coloring when i add a new bag to the jar LOL. Yes, one of those moments was transporting a 35lb feeder pig in the Cadillac, oh the stories we all can tell...blessings n sunshine always!

    I wasn't gonna comment about the goat when I saw you put it in the back of your vehicle, then you added the bit at the end and I couldn't help myself. - You are braver than I am. How long did it take to get that smell out? Maybe if I had enough plastic or trash bags to line the back. But WOW. Welcome to homesteading the hard way. I hope it all ended well.
    I gotta try this recipe when our hens start laying again. Mom always made great pudding but had already moved on to the "My-T-Fine" pudding box by the time I came around. Still butterscotch was my favorite. My older brothers got to taste her from scratch puddings.

    I love homemade milk puddings.. My mom used to make them ALL the time but as I grew up I opted for the packages of instant pudding because of time constraints... and laziness, if I'm being honest... However, now that I am living on my own I think I'll start making my puddings from scratch.

    It was perfect 👌
    This recipe is so far above the boxed version. It will not scorch. I hate butterscotch boxed pudding. Awful.

    I just attempted this for the first time. I do not cook. I fix cars pretty well, and drive em really well. But cooking and baking are not things i have too much experience with. It has been an enjoyable experience. I just put the pudding in my refrigerator

    So I do love this and it's not THAT complicated but it does answer the question "why would someone buy a box mix when they could just make it themselves". When you've worked 10 hours, finally got the kids in bed and you've only got 1-2 hours of really free time at the end of a day before you pass out and have to do it all over again... box mix haha

    i was so excited to find a recipe for butterscotch pudding for my husband. so, i made this exactly as specified came out perfect except 1 big factor... it does not taste like butterscotch. it tasts like vanilla pudding. im not a fav of vanilla extract so i only used 1 tsp. but even the 1 tsp made it taste like vanilla.

      hahaha-- yep! I'm sure the neighbor wouldn't mind shipping him to OR! I'm not sure about the maple syrup-- I'm a little concerned the extra liquid might mess up how it sets...

    Have you ever had fresh bread toasted with real butter and then warm butterscotch pudding over top? Yes. I grew up eating that as a poor-man's breakfast and you don't feel poor at all when you taste it! Yum. I thought you were serving the kids warm pudding when they came inside! I love warm pudding and that's what's gotten me away from the box pudding, it's getting harder to find the misc cooknserve flavors. Remember the butter pecan flavor? There were also various vanillas. I have a pudding frosting recipe and I miss those easy instant variety flavors! We made banana pudding on Saturday.

    I find if you divide the milk and put some in the egg yolk mixture to thin it out, it tends not to "scramble"

    I skipped the yoke and it still tasted great, highly suggest added a bit more starch and salt to keep it thick.

    The end of your video made me laugh because just last month I had three Icelandic sheep and a new Great Pyr puppy in my Yukon XL for the 3 hour drive from Idaho back to Montana. That's where those plastic floor mats come in handy. And thankfully, the smell went away eventually. 🤷‍♀️🤷‍♀️

      Crud... I knew that was going to happen, ha! I have it listed as 5 in my cookbook, but honestly, you won't mess it up if you use 6-- so either way is fine! :)

    I must have done something wrong... This butterscotch pudding tastes just like my sweet potato pie... I loved butterscotch flavored pudding growing up. Is it supposed to taste like other butterscotch? Or was I expecting the wrong thing?

    The irrefutable reason why instant anything became so popular is due to laziness becoming the prime outlook and then the epidemic of obesity soon followed after that

      Why instant anything became so popular: are you familiar with "2nd shift"? In the US we are fed this baloney about how women can have it all. So NOT TRUE and it took me too long to find that out. Yes I "had it all": I worked full time, I used box mixes, cheats, fast food dinners, cut corners for prep wherever I could (bought already-sliced raw veggies, used a crock pot, then instant pot) anything to help me stretch time so I could at least have us all sit down together. You can't have it all. Stay home with your kids. Make good decisions about how you spend your time. A clean house isnt the most important thing no matter what our 1950's mothers told us. Most of them stayed home. You have to MAKE a home, everyday. Just like you have to RAISE your kids, everyday. This is the most opinionated thing I've ever put in a comments section, but the stress of having no time and being exhausted is reason enough to reach for those box mixes. No judgment, it's sometimes not a choice. I know not everybody can choose to stay home. But don't buy for 1 minute what they are trying to sell you, it's just an illusion of having it all. Ok off my soapbox now.

    it still comes from the sugarcane. And is still sugar! I would rather use Monk sugar.

    i would be careful with that wire whisk- too much wire whisking can prevent the corn starch from thickening up properly. use a wooden spoon instead.
