  • Hi Guys, today I’m reviewing the Oster 2-Pound Expressbake Bread Machine with 13-Hour Delay Timer, CKSTBRTW20.

    It measures 11.5 inches tall, 10.5 inches wide and 12 inches deep. The unit weighs about 8 pounds. Making bread by hand takes time and effort. There are a lot of stages. A bread machine, goes through all those stages and bakes the bread so there is little work on your part. You just have to add the ingredients. A basic 2lb white bread will take 3 hours 25 mins total in this machine.
    The glass viewing window so you can see what’s happening inside the machine at all stages, The control panel/lcd display. The removable bread pan is non-stick and measures 7 inches long, 5.25 inches wide and 5 inches deep, kneading blade, kneading blade removal tool, measuring cup, measuring scoop. The instruction manual has a number of recipes from basic white bread to sourdough, rolls, bagels dough, pizza and pasta dough. You can even make jam and marmalade with this bread maker. The instructions are detailed and there are tips and hints which are helpful. Baking is a science and measuring ingredients exactly makes a difference in the result. So, use a liquid measuring cup for liquids, dry measuring cup for dry ingredients and measuring spoons. With bread machines, you have to put the ingredients in a certain order. Liquids first, then dry and yeast goes in last. All ingredients should be at room temperature and be fresh, don’t use yeast or flour that’s old. Don’t plug in the machine yet. Open the lid and pull straight up to remove the baking pan. You may have to move it from side to side to get it off. Wash the pan with soap and water and dry it. Attach the kneading blade to the baking pan. We’ll put all the ingredients into the pan before putting the pan into the machine. I’ll test this bread maker by the French Countryside Bread - the recipe from the manual.
    Ingredients:
    1 3/8 cups water - 324 ml
    1 1/2 tblsp oil - 23 ml
    1 1/2 tsp salt - 8.5 g
    4 cups bread flour - 480 g
    1 tblsp sugar - 13 g
    2 tsp active dry yeast - 5.6 g
    First put all the liquid ingredients in, then the dry. Make a well in the flour and add the yeast. Yeast shouldn’t touch liquids when you’re adding ingredients. Put the baking pan into the machine. Close the lid and plug it in. You’ll hear a beep and the display lights come on. The time setting says 3:25. Press Menu Select and choose the type of bread. There are 9 bread settings and 3 fast bake settings. There’s a corresponding number to the type of bread. 1 would be white bread. Press the crust color button to select the kind of crust you want - light medium, dark or rapid, Rapid can be chosen for basic, french or whole wheat and will make the bread about an hour faster. I’ll choose medium. Press loaf size button for 1, 1.5 or 2 lbs. Some programs have fixed settings for crust color and loaf size. You can also a delay timer that can be set for up to 13 hours. Press the start/stop button and the machine starts making bread. You can hear and see the mixing of the ingredients. There are stages the machine goes through and they are listed in the manual. First is the kneading for 5 mins, then the dough rests for 5 mins, it’s kneaded again for 20 mins, then it rises and is punched down. It rises again, is shaped and it rises again. Finally it bakes for about 60 mins. During the second kneading cycle, you should check the dough and if it’s too wet, add flour a tablespoon at a time. If it’s too dry, add water a teaspoon at a time. So even though the bread maker is going through all these stages on it’s own, this is the one part where you have to check and make sure the dough looks as it should. The timer will count down and when it reaches 0, the bread is finished. The machine will beep 15 times and switch to the automatic keep warm setting that keeps the bread warm for an hour. It should also beep 15 times after one hour of keep warm mode. It’s best to remove the bread right away after it’s finished.

    I bought one this year and have some recommendations on the same recipe:
    As mentioned by others, remove the blade before the final proof (I do it before the proof so it doesn't wrap all the way around)
    I scored my bread before the last bake for some nice prettiness on top
    I added butter to the top and it made the top closer in color to the sides
    I'm very happy with this machine, myself, as carpal tunnel issues can make bread baking more a chore than a hobby sometimes.

    One tip. To alleviate digging the paddle out of the cooked bread, remove it just as it goes to bake mode. There will still be a small indent from the pin but much less noticeable.

    Wow. I was so lost (and excited) when I got one of these bad boys added to my kitchen arsenal. I was sooo lost and confused about the whole bread making scene and where to even start.     I found this bread machine at the Goodwill for $3.99. I use it for making jams! Just made some strawberry jam a few nites ago, and it is tasty-tasty! Recipe: 1 cup sugar; 1 Tbs. Sure-Gel fruit pectin; 8-9 oz. diced frozen strawberries; 2 tsp lemon juice. Set the machine for jams. I would recommend covering the top of the pan with Reynold's wrap (with just a couple of small holes, so that you do not have jam spattered in your machine. After the cycle completed, I poured the jam into a pint size canning jar and after cooling down some, with lid in, placed in the refrigerator. The next morning I had this jam on toast, and it was delicious. When it is strawberry season, I will make this jam with fresh strawberries - about 1 1/2 cups. You can also use low sugar fruit pectin.

      can also set the machine for dough cycle only, and then bake the bread in your oven. There
      was a bread machine which was once sold that had the capability to bake, toast and make
      bread. It is called the Toastmaster Breadmaker's Hearth. I also own one, and use it for baking
      and toast. I have not used it for making bread because of my Toastmaster. . If you have a large
      family, it is not big enough to bake for that size family. If you are baking for 2-3 people, it does an
      excellent job. There was a Bread and Dessert Maker made by Breadman called The Corner
      Bakery. I've made bread, cheesecakes, chocolate fudge cake, poppy seed pound cake, rice
      pudding and churned butter in it. If you have any further questions, just let me know.

      I had a Black and Decker before and loved it. Someone bought this one for me and I don’t like it nearly as much. I’ve tried making recipes using The Complete Bread Machine Bakery Book and it’s terrible! (The great thing about this book is you don’t even have to use bread flour!). The paddle on this machine is smaller and if I try a quick bread it doesn’t even get mixed enough to form a loaf. I went back to using my old machine.

    I'm new to bread machine bread, and I learned pretty quickly that the 2lb loafs are too big IMO, each slice is like the size of one and a half regular slices. I recommend that you stick with the 1.5lb loaf.

      I think it depends on what you plan to do with the bread. I make big sandwiches, croutons, and breadsticks that are great with the 2lb setting! Just gotta explore. Good luck!

      @Mr.56Goldtop Glad to hear it! Even though I love traditional baking, the bread machine I got at a thrift store is still a fun adventure when time is a factor. The random experiments alone are worth the attempt. Each loaf is less than a dollar, and you never know when you can find your favorite bread from just fiddling around! My current favorite is a bacon and dill cheese loaf. I've been trying to get it incorporated with Japanese milk bread, but it's amazing by itself.

    I just got my Express Bread Maker. The may have changed the design a little but on mine to get the pan in and out you grab the handle with both hands where it attaches to the pan and twist the bread pan slightly. You set it in at a slight angle and twist and it sorta snaps in place. The same when you take it out. I'm pretty sure it said that in the manual. Good Luck! My first loaf was the 2 lb white that was in the manual. Turned out great. My second one was the whole wheat one that was in the manual. Not so good, too dry. But now I know to add a little water during the kneading stage. Looking forward to trying that one again.

    Great video! I make my bread from mixes and use this machine, this is my 3rd year. My favorite bread is Nine Grain by Hodgson Mills. I came here to find out how long I'm s'posed to allow the finished bread to rest (cool) before I slice it. Sometimes I can't wait... I take it out of the machine when it's finished then remove it from the pan. I use a pair of gloves and if the pan is a bit stubborn, rock the pan by the handle side-to-side to ease it out.
    Thank you for your video, quite informative.
    Oh, I have an Ezee Slice wooden slicing guide - one side is for thicker and the other for thinner slices. Got it from Australia, forget what I paid for it but I'm very pleased with it. I cannot slice free-hand.
    Also, I don't wash my bread pan, it's not necessary. I simply wipe it out.

      This is coming a bit late but only just watched this video today. To answer your question how long to wait, you really should wait for an hour or two before cutting it, the longer better, as if cut too soon you loose so much moisture and when cutting you'll notice that the inside the crumb has little roll things sort of gummy pieces when cut, waaaayy tooo hot to be cut, let it get comletely cold, sorry I know it's tempting to cut it hot, but wait, wait.

    The pan twists to lock in place.. When it's done baking use an oven mit and twist the pan clockwise and it will come right out.

    Follow up! Because of these changes I made today, the most beautiful well shaped loaf of bread came out of my Oster Bread Machine. I was really surprised. The flavor passed the flavor test with flying colors. Absolutely no yeasty taste. LOVE IT! LOVE IT! LOVE IT! And it had to do with switching to UNBLEACHED All Purpose Flour. So my bread machine has been spared. Won't be getting rid of it now. My bread flour will be used in other ways such as thickening gravy or coating chicken. Bye bye bread flour. You won't regret it. But you need to find a recipe that use Unbleached All Purpose Flour because the measurements are different.

    Yes you can remove blade before proofing better yet is using dough option #9. Bought this machine 7 years ago still works great though I haven’t actually baked any bread in it for years. Instead just use dough option #9 when done form dough, place in bread pan for 2nd rise then bake in the oven French bread comes out great. If you just got your first bread maker don’t be afraid to open the lid while machine running during kneading cycle. If dough looks too dry adding a 1/2 Tbs of water, let it knead few more minutes, if still dry add another. If looks to wet add Tbs of flour, again let knead add another if needed. Happy baking

    To keep the paddle from sticking to the bread pan, put butter in it before sticking it on so it comes out easier.
    *plus brush butter on the sides then put a towel over the top until cool. It helps get the bread to be soft.

    i have the same machine, to remove the bread pan, you have to turn it a little bit (like 3-4 degrees), you can't just pull it straight up, otherwise, you will break the hooks that are under of it.

    One big tip when making at least the French bread that’s in the recipe booklet that comes with this machine use refrigerated ice water do not use Luke warm or room temperature water if you use ice water the loafer bread will come out perfect size all the time

    For some many years 1 out of 20 times i bake bread in my oster bread maker and set my settings on 3 whole wheat. The end is not edible( it is like dough) but have to put in the over to finish. Is it the settings, is it a detective setting of oster bread maker or is it me; can you do a video using the setting(whole wheat)?

    The only thing I don't like about this machine the sunbeam, and the Hamilton Beach is because of the shape the bread pan is. Most bread machines make a horizontal or tall vertical loaf. These machines make a square

    The video is helpful. Instructions differ slightly from a different model/make that Ii previously had. This is an older model I bought at a church sale and generally works well. But I have a question. My crust gets too dark and hard to cut. Can I turn off machine sooner than the 1 hr. baking cycle has finished? How long would you suggest I allow it to bake? Also there is a beep mid-cycle for something. Is that when I'm to add fruit or other ingredients? How long into the normal cycle does that second beep sound so I can plan for it.

      It's not as bad as when people do it in a questioning tone, which drives me batty, but yes it is extremely noticeable and distracting. I had to skip ahead several times to get through the video. Also this isn't really a review, just a demonstration. Nice helpful vid though.

    Question....my instruction book says to use two tablespoons of butter, not vegetable oil. Does that matter? Also, I had been using all purpose flour not "bread flour" and the last couple loaves I've made have had the top fall in. Would that be the reason? Not using "bread flour"? I'm also using "active dry" yeast (from a jar) because thats what the instructions say, but should I be using a different yeast? Rapid rise?

    anyway to get normal bread out of these machines?
    theyre always 2 feet tall. great i guess if you just put butter on it, but what if you want a proper sandwitch, or to use a toaster. or whatever.

      Cut the loaf in half side to side, then cut normal sized slices. Yeah you only have three sides with a crust, but it's still worth it.

      You can also just bake it in your own oven with your bread pan. This breadmaker can knead it for you? It'll still save on time and dishes.

      I use bread mixes, measure the water temperature with a thermometer to make sure it's within the guidelines (too hot will kill the yeast, too cool and the bread won't rise). I measure twice: when it comes out of the microwave and when it's added to the pan. Liquid goes in first, dry ingredients followed by the yeast that you pour into a well you create on top of the mix or flour. Close the lid, adjust your settings and press start. If any adjustments are needed (addition of either water or flour) they're done during the first 5 minutes while the machine is kneading. After that leave the top closed (unless you're adding stuff at that interval). Enjoy the results! Yes, it's okay to leave the mixing paddle in until it's finished, pull it out with the tool provided when you un-pan the loaf.

      Heck yes, I would stick with the unbleached plain flour, as the yeast is the rising agent in bread making, S.R., flour is for baking cakes etc. Your bread may overflow the pan, that would not be good.

      Hi, I haven't tried it but have seen recipes where bread makers are used to knead glutinous rice. I assume it would work in this machine. Hope that helps :)

    Great video. I've had this particular model of bread machine for a while now and have made several loaves of white bread and French bread. And as long as I use the bread flour it does a fantastic job of making a loaf of bread. However I have some issues with the flavor of the bread as it has a yeasty taste to it regardless of what I try. I've tried it with All Purpose flour which is a joke but at least it does have a good taste. And I notice that you said, "It taste pretty good". So did you taste that yeasty flavor?
    I will be making a loaf of white bread using unbleached All Purpose flour and butter instead of oil. So if it doesn't rise properly or it taste yeasty my bread machine will be history. As you say, it is big and it is clunky and I can always use the room if I'm disappointed this time.

      That is because it is made with yeast. If you want a bread with zero flavor go back to store bought ,that will take care of that problem.

      I've learned how to make bread without that yeasty flavor. And it turned out great after experimenting. I put warm water and sugar in the bread maker first. Then I sprinkled the yeast over the surface of the warm water and let it foam for a few minutes. Then I add the dry ingredients with the flour first and butter. This method got rid of the yeasty flavor and I love it.I believe bread flour is unbleached flour.

      @@johngaspar4425 Another thought, you can always use 50/50 plain/whole wheat flour on a white bread setting to or some of the others, you may have to add a couple of tablespoons of extra liquid as the whole wheat tends to be drier. Hope that helps too?

    First few uses worked great, now after 3 or 4 loaves, no bread recipe will rise. Tried brand new yeast, instant yeast, tried proofing, nothing works. Waste of $100

    This is an excellent video and I gave it a thumbs up. However, and I’m saying this in a helpful way, the rise and fall of your voice sounds very unnatural and at times repetitive and annoying. Sorry. Sometimes you speak normally and it sounds really great. But then you go back into that up and down... I only say this because in your natural voice you sound good enough to be in broadcasting and I’d like to see you improve.
