Milky Baked Doughnuts

  • Ang recipe na ito ay pwede ding fried. Same consistency pa rin ang makukuha kung nasa tamang temperature ang cooking oil mo.
    Yeast Mixture:
    1/4 cup warm water
    1 tbsp sugar
    1 sachet yeast (8gr)
    2 cups All purpose flour (add 1tbsp if too sticky)
    1 cup bread flour
    1/4 cup + 1 tbsp milk powder
    1/2 cup sugar (minus 1 tbsp)
    1 tsp salt
    2 medium eggs
    1/2 cup butter
    1/4 cup milk
    1 tsp vanilla
    Coating mixture:
    1/4 cup milk powder
    1/4 cup powdered sugar
    Instructions
    1. Dissolve sugar in warm water. Add the yeast. Set aside to activate yeast.
    2. In a mixing bowl, pour the dry ingredients. Start mixing in a low speed. Add the eggs (1 egg at a time) followed by yeast mixture.Then milk and vanila. Continue mixing. Lastly, the butter.
    3. Knead on high speed using dough hook attachment for 8 minutes, or knead by hand for about 20-30 minutes.
    4. Once dough is smooth and elastic, form into a ball. Place in a greased bowl and cover with plastic wrap.
    5. Let the dough ferment until it doubles in size about 20-30 minutes ONLY.
    6. Punch down dough to remove air pockets. Divide the dough into 20 equall parts (around 40-42g per piece) then form into balls.
    7. Flatten a piece of dough then place one slice of cheese and roll lengthwise. Pinch the seams together to seal.
    8. Baked in a preheated oven at 150 deg Celcius for 10-12 minutes. If you want to fry it, fry the dough in a preheated oil, until just lightly brown.
    9. Mix together equal parts of milk powder and powdered sugar in container/tray. Roll baked/fried donuts in sugar-milk mixture to coat.
    10. Best served warm.

    HOW TO MEASURE FLOUR PROPERLY
    Use a spoon to fluff up the flour within the container. DO NOT pack the flour into the cup. You'll end up with too much flour, even with a properly leveled top.
    Use a spoon to scoop the flour into the measuring cup.
    Use a knife or other straight edged utensil to level the flour across the measuring cup
