- I had about $25 to create meals for myself for the week and I wanted to include higher protein options for breakfast, lunch, and dinner. I focused on creating high protein meals that are dairy free and most of the ingredients ended up being gluten-free and lower sugar as well. If you’re sensitive to any allergen, always be sure to check the labels and make ingredient choices that suit your specific needs.
This meal plan is to provide inspiration and I encourage you to customize it to work for you.

This is just MADE for me! I am celiac and have an anaphylactic dairy allergy...
When looking for chickpea pasta in the past, I found that the Quinoa one was higher in protein and was the same price, so I bought that. I also buy the Silk High protein almond & cashew milk because it is higher in protein & calcium than other brands (Calcium is really important for anyone who is dairy-free to prevent osteoporosis when you are older)
With the soy sauce it is worth looking at the ingredients - many of the Japanese soy sauces (Tamari) are gluten-free - the Kikoman brand is, and some store brands may be as well - here in Canada, the Superstore "no-name" budget brand is gluten-free!
I would also probably get an extra can of chickpeas and make some hummus (subbing the peanut butter for the tahini - although sesame seeds are a very GOOD source of calcium...) to dip those veggies in.
Using canned salmon & mashing the bones in is another good source of calcium for dairy-free people, and this works well for making things like salmon patties.
Seriously, most of my food choices revolve around making sure I get enough calcium - I have been dairy-free due to an allergy for over 30 years and have been diagnosed with the early stages of osteoporosis and I am only 55...

Recipes look good but I would substitute another protein for tofu. My family avoids soy products.
I used to use canned salmon for salmon Pattie’s and they were delish. Nice to have in the pantry for a quick dinner if you forgot to thaw something.
Use an immersion blender for the mayo. Put all the ingredients in a mason jar and mix, slowly raising the blender upwards as it thickens. This worked beautifully for me and the taste is so good!!

I also didnt see anything other than the oil and aquafaba go into it. Mustard or mustard powder (just a pinch!) Can be added to help with emulsification so it doesnt seperate. @LauraLegge

Yay! Great job Laura! For the mayo it’s crucial to drizzle the oil in super slowly as the blender is running. Also, I find that sometimes it helps to get the aquafaba going for a few minutes first before adding the other ingredients. All of these ideas are fantastic. I don’t eat fish but the marinade from the salmon would work well with tofu as well.

I was so gobsmacked over our much higher prices that I forgot to say how great your videos are. Any decent video takes time. Yours takes a lot more because of the dietary parameters. Meal plans for special diets don't just fall out of the sky. Neither do the selected recipes. Thanks for the hard work.

Split pea soup with ham is a favorite at our house. No need to blend. I cook the split peas, seasoning, broth/water, and ham/ham bone for one hour, then take out the ham and add the veggies for another 30 minutes. The split peas are completely mushed and the soup is thick and delicious!

I use a stick blender in the hot split pea soup instead of pulling some out to blend and adding it back in.

I love my immersion blender! I use it for soups all the time. So much easier than the blender. Also great to blend up small amounts of stuff like berries for making my kombucha, chick peas for chickpea salad, etc. I have alllll the gadgets lol But I have a few go tos.
Salmon patties - I just use one can of salmon (with skin and bones). I put the entire can (sk8n, bones, and broth included) into a bowl and squish it all together with my hands. Add 1 egg or 3T aqua fava, and a good spoon or two of flour or cornmeal (equals about 1/4c). Mix well. Pan fry like you did. I like to top with fermented pickles and mustard 😋

I love watching your cooking because we are a gf and df family, and hubby also has a peanut allergy. I'm allergic to dairy and gluten. I don't cook different for everyone, everyone eats the same meal or goes hungry. I'm having my meal prep day today and so far have made beef sausage stew and a beef stroganoff.

What a handy tip ... peeling hb eggs and putting them in a jar. If I could only get my eggs to peel nicely, I'd be less frustrated. Ice water doesn't change a thing. I wonder if Costco eggs are too fresh?
You can cook split peas longer if you want. They cook down to almost a cream soup consistently and thicken the soup. The chickpeas won't soften but small white beans would.
I chuckled when you added red pepper flakes to the soup as it isn't in any recipe I've seen...however, I do the same. I think I use red pepper flakes as often as garlic powder!

I put cooked quinoa in my salmon patties and have started broiling instead if cooking on a skillet and they are great!

One of my favorite high protein meal components uses TVP (Textured Vegetable Protein). It may seem scary but it is just made from soy flour and can be ordered online, found in bulk bins quite often, or in the area of Walmart with Hispanic foods labeled Carne de Soya. I soak the TVP in boiling water first until it looks fluffy, drain it, and squeeze the water out. Then I dry fry it in the pan for any residual moisture and add in our favorite taco or chorizo seasonings. It’s super versatile and can be added to tacos, bowls, burritos, tofu scrambles, etc.

Thanks for doing a dairy free menu! I have a dairy allergy and am always looking for ideas. I normally buy oat milk because its consistency is more like dairy milk and I find it works great in most recipes.
@@LauraLeggeWhen we use tvp we add beefless or chicken less bullion to the water. I’ve even added taco seasoning to the water. Just another way to get the flavor in. My hubs likes it in his spaghetti sauce to bulk it up. Nice dry item to have on hand.

I love your videos . Your channel is my favorite, and I appreciate all of your hard work! I have to stay gluten, dairy, soy, and refined sugar free due to autoimmune issues. I also have to limit grains and legumes as well. I really appreciated this video. There are gluten free bread crumbs. You also can make your own with gluten free bread. I use coconut aminos wrh a tiny bit of fish sauce in place of soy sauce. Fish sauce with it gives the umami. In all recipes, there are substitutions that can be made. Thank you again. 🤗

I love your videos and the simple, but tasty recipes that you use from Aldi grocery hauls. I know this is a bit tricky to do on a budget, but I’d love some fresh ideas (in a bit of a rut) on a meal plan for my picky, allergy kid. He doesn’t like eggs (fine to bake with though) or tofu and is allergic to peanuts, raw celery (it’s fine if cooked), and all tree nuts which includes coconut. He has a sensitivity to milk products (cheese is ok) so we use the Aldi organic soy milk. Also to make things even more challenging- he doesn’t like oats. 🤦🏼♀️ He used to love broccoli, but unfortunately that “tingles his tongue” now. Help! 😆 I feel like I make the same tacos, sliders, spaghetti and chicken soup dishes on repeat.

Just an FYI that you can make your own dairy free 'milks.' The process is different with almond and oat milk than cashew, but there's a ton on the Internet/pinterest to show how. Saves money and no additives. 🙂

Great video. These are my medically imposed boundaries (celiac, lactose) so always looking for ways to make it work. I’ve also developed a sensitivity to soy, so unfortunately tofu isn’t an option for protein. Aldi’s grass fed ground beef and beans are lifesavers. I think only their organic beans are gluten safe from looking at the Dakota labels.

These are some really great ideas! I don't think you mentioned how many people are eating from this. Your title says single person, but you mentioned your daughter eating salmon patties. Is this $25 for one person for 7 days? My Aldi prices are the same as yours (I'm in NC) but I'm having trouble finding tofu in my store now. BTW your doggos are cute! Mine also hover in the kitchen when I'm cooking!

Grapeseed oil is a great choice with a higher smoke point than avocado oil. I developed an avocado allergy doing whole 30 a couple of years ago. ETA: oops! I'm backwards. Avo is higher. Grapeseed is higher than olive oil.

@@LauraLegge Aldi carries the grapeseed as both oil and oil spray. Very neutral flavor. And very reasonable price. And I corrected my post. Avocado is higher smoke point. Grapeseed is higher than olive oil. And it's cheaper than avocado or olive oils.

Love your videos, however, your prices are not even close to what it costs in Colorado (Walmart). Glad some of y'all can still get groceries at reasonable prices!
If you can find chocolate chips that are KOSHER PARVE they will be dairy-free, and tend to be more affordable than the brands you showed in the $8-$10 price point.

Holy cow holy cow holy cow!!!! (See me running around in circles like a crazy person!). Just for curiosity and because of things I hear about our food costs, I decided to compare prices. Oh my. I heard we were more expensive. I was still stunned. $47.40 + another $1.99 for 1# generic split peas from another store
I followed your list as closely as possible checking here on the blog and backing up the video as needed to get proper sizing and specs. I "shopped" Walmart generics online since that is how I have to shop for myself. I do pick up myself. I'm just horrified.
The blog post is dated 9/21/24 and today is 9/25/24. Virtually no time between the two shops, just location (Same state, you're south I'm north, also inland, maybe 5 hrs. No Aldi here).

Trader Joe’s definitely still has the best price on dairy free chocolate chips at $3.99. They used to be $1.99 forever lol But TJ’s only raises prices when they have and $3.99 is still a steal compared to other brands.

We live in OK now and there’s 2 in the whole state 😂 You can always call ahead to see if they have what you need in stock. Unfortunately they don’t do holds anymore, but they can at least tell you what they have and some costs.

Soy milk has more protein than almond milk if the price is reasonable. I think some soy milk has 8 grams of protein and almond milk might have 1 or 1.5 grams.

Lentils and beans are full of protein.
Stay open-minded and consider a way to use these ingredients in a way that works for you, if your goal is to reduce meat and/or reduce exoense.

@LauraLegge aww thanks! Yeah, it's a bit much. I was doing the AIP diet, which limits practically everything besides meat and some veggies/some fruit. But now I've expanded to some gluten-free grains and more veggie/fruit.
I can have eggs now, too!! Eating is hard work sometimes.
