Used your recipe to brine/marinade some Salmon for 24 hours. Smoking in the Traeger for 90 minutes so far. probably going to let it smoke for another 90 minutes, then transfer it to a Dehydrator.

As far as drying it yes. We used to air dry it over lines in Alaska. I just tend to like the oven or a temp controlled smoker better. As it activates the fat rendering process just enough to give it that next level deliciousness.

all my keto books suggest eliminating soy… so not really keto clean
Soy is basiclly salt water, he says in the video. But it easily can be left out of the recipe or replaced with something else
