19:01 Spike's got it figured out. I was a cook and Chef for 15 years. Every time I host a get together I get the same kind of comments. Owning, running, and working at a bar or restaurant is not glamourous. It's hard work. It's every evening/night, weekend, and holiday. It's living on a razor's margin. Look up bus man's holiday. I'm grateful to the folks who have the drive to keep providing the vital places for us to gather. Please keep in mind that it's an incredibly difficult industry and respect the people providing the experience.
On Trader Vic's 1/4 oz "dash," I think that's because he was using a speed pour spout, where you count off seconds for each 1/4 oz, so that the first count (which would be a natural dash from the bottle) is 1/4 oz. Nowadays, when the emphasis is on using jiggers, the art of accurate speed pouring (which requires a lot of practice) is in danger of becoming a lost art.
enjoyed this drink, I used Coruba/Smith&Cross instead of the Puerto Rican, because I've never had a Puerto rican rum I like but I love Jamaican rums, so it was a Jamaican rum barrel. Very good! Great episode!
Ron Carioca rum was an old Puerto Rican rum. The brand was revived by a Canadian company but of course the original product was from PR. Don Q/Bacardi/Cruzan and other Spanish style rums/rons are good subs.
