I think I solved the mystery of the origins of this Krakatoa recipe. After Hale Pele opened in 2012, Blair confirmed to me that they were using my original tribute recipe for The Mai-Kai's Shrunken Skull (which I posted in 2011), among other Mai-Kai tribute drinks. It's likely they also did a riff on my first tribute to the Mutiny, posted in 2012. It's very similar, just with smaller proportions and no honey ... Tribute to The Mai-Kai’s Mutiny, v.1 By The Atomic Grog, April 2012 * 3/4 ounce fresh-squeezed orange juice * 3/4 ounce fresh-squeezed lime juice * 3/4 ounce white grapefruit juice * 1/2 ounce rich honey mix * 1/2 ounce passion fruit syrup * 1 1/2 ounces strong Kona coffee, freshly brewed, then chilled * 1 1/2 ounces light Virgin Islands rum * 1 1/2 ounces dark Jamaican rum * 1/4 ounce Don’s Mix (2 parts grapefruit juice to 1 part cinnamon syrup) * 2 dashes Angostura bitters * 2 drops Pernod or Herbsaint Blend with up to 1 1/2 cups of crushed ice in a top-down mixer for around 5 seconds, or until frothy. Pour into a large snifter glass with more crushed ice to fill. The recipe was later updated in 2018 when I found out The Mai-Kai didn't use cinnamon syrup, and then again in 2021. Omg! I FINALLY realized who Kelly looks like to me!!! THE legendary jazz pianist Vince Guaraldi, who gave us the phenomenal Charlie Brown music. I brought up a pic of Vince as I watched this and it is uncanny! Great episode btw and for what it is worth, I'm a big fan of Kelly - as I have stated many times.

I would love to hear Kelly talk about bar management!! Especially what he thinks is different between managing a tiki bar vs. a mundane cocktail bar. First question: How do you estimate the number of mugs you have to have available for a shift? And hurrah for the out-takes.
What Leandro recommended is a whip shake. Very little pebble or crushed ice on the tin to avoid watering the drink down. Enough to chill the drink while shaking. Also the bottle pour spouts are highly recommended. Using them you can control the flow of the pour and avoid spilling your expensive spirits. Any time I pour straight from the bottle, I always spill or over pour. Just make sure you put the corks or caps back on the bottles when you store them. If you leave the pour spouts on the bottle you'll get fruit flies inside your bottles. 🪰

He's not adding 8 oz of ice to the tin and then shaking it till it's all gone. I have also seen Erick Castro do the same thing with exactly 2 oz. of crushed ice. You can't tell me that's too much dilution.

Just made this drink and had to make some substitutions Bacardi Black for Mount Gay Gold, El Dorado 12 year for Hamilton 86, and Tia Marie for Mr. Coffee Black! And this drink is awesome! Hope to get the right ingredients soon but not mad with how it turned out!

It's very interesting as it uses rye whiskey and banana flavored whiskey and is not rum based. I made it not having banana flavored whiskey but just whiskey and 1/2oz of banana liqueur. WOW! Here is the recipe: 1/2 oz Lemon juice 1oz pineapple juice 1/2 oz Rye Whiskey 1.5oz Banana Whiskey brand Ambrose Banana Whiskey (I substituted with 1oz whiskey and 1/2 banana liqueur. 1/2oz Amaro Melitti 1/2oz Orgeat Shake with pebble ice Pour in mug Fill with pebble ice Cheers!

Spike what do you think of Liquid Alchemist's Passionfruit Syrup as compared to others? I used it in a Chief Lapu Lapu and couldn't really taste it. Haven't tried another brand yet as there still syrup left.
Correct me if I am wrong, but doesn't this drink really have 3 oz. of booze plus a wash of absinthe? I know that liqueurs don't have the same alcohol content per oz. but they can really pack a punch because they are so sweet, which makes them very deceptive. Well it looks like an amazing drink. Okole Maluna!
I tried making a Don's Mix #4 with Cinnamon Schnapps and grapefruit juice. But the cinnamon flavor was too, ''fireball'' candy, and not real cinnamon-tasting. Didn't work. Also I can't get White Grapefruit in the local groceries.
