    I was searching up callaloo and became confused. One set of leaves look like eddoes/ dasheen and the other look like amaranth (what you have) and another they classify as elephant ear. Does it matter? Never grew up with anyone who made it

      Hi dear, it doesn't matter which one you use. This one I call Jamaican callaloo. The one I grow up on is dasheen leave.

      Jamaicans call amaranth and a dish of sauteed and stewed amaranth callaloo.
      In most of the rest of the Caribbean down to Barbados and Trinidad and Tobago they call dasheen or taro callaloo and a soupy dish made from it callaloo.
      In Trinidad and Tobago amaranth is called spinach or spinach bhaji or bhaji or chorai bhaji.
      The soupy type callaloo can be made with tender amaranth or North American style baby spinach.
