🇻🇨Vincy Style Callallo Soup

  • Remember to cook your callallo to the consistency you like. whether you like it thin, smooth, thick, rich, etc.
    Recipe
    Two bundles of callaloo
    Three slices of cooked pumpkin and 4 cooked okras blended with some of the callaloo
    8 1/2 cups water total including the blended water
    1 1/2 cups coconut milk
    Precooked pig tail
    Precooked cow foot - seasoned with, a dash of salt, green seasoning, 1 medium onion, 4 chopped gloves of garlic, 4 bell peppers, dried thyme, pimento, pepper flakes, paprika, goya all purpose seasoning, and cilantro.
    I love to add chive but could not find any.
    Two small eddoes
    A medium size batata sweet potato
    One small yam
    Dumpling- 1 cup of flour, 1/4 cup cup of grated coconut, pinch of salt, and water to knead.
    1 medium size carrots
    Additional diced uncooked pumpkin
    3 teaspoons of salt
    *Add more oil if it is drying out when blancing. Blancing in oil helps to soften the callaloo and break it down faster.
    *When your callaloo is close to tender or tender add your other ingredients to the pot and cook callaloo to your consistency.
    *Callallo can take 45 minutes to an hour to get tender if not blended. You can always taste the cooked leaves for tenderness.
    *You can partially cook your cow foot and pig tails and put it to boil with the calaloo.
    *If you are using your callaloo leaves right away feel free to cook it in water and blend if you wish or just cook until it is tender. Also, if you blanch your callaloo you do not have to blend it if you do not want. You can cook it straight like that until it breaks down.
    *You can cut up your callaloo and freeze them if you do not want to blanch them as well.
    *Mix your callaloo occasionally to prevent STICKING to the pot as it thickens.

    OMG. Sam now u make me want too eat some nice Calalloo soup on this cold Saturday. I was thinking soup all week. But now after seeing this I think I know what I should cook. I have pigtail and chicken back here. I just need some pumpkin and eddoes. Mmmmm

    Pls make one with crab and crawfish next time when you're doing another soup.. I made your sponge cake and let me tell you. not a single bust in it. raised to the right level and delicious. You're a pro lady

    Looks so yummy..I love calaloo,but when ever I'm preparing it I have to wear gloves if not it would itch me for hours.

      I used spinach. I normally boil it for few minutes until it wilt and blend it up in the blender.

    So So delicious. Trying that definitely will like to put 🦃 do I have to pre boil it too? Fresh turkey

      Hi Angela! If you want to do the turkey callaloo, here is the method. No you do not have to pre cook the turkey. You have to seasoned your fresh turkey. You can look in the discription to see some seasoning I used or use your seasonings you prefer. If you want to blend all your callaloo you can do that. You can put your seasoned turkey wings to boil with the callaloo, because you know turkey wings take a good time to cook as well. The Turkey wings should take about 45 minutes to an hour, the same time as the calaloo leaves. After this put in your ground provision and dumplings and boil down to your consistency. I hope this helps, feel free to ask further questions.

    Striping calloloo is to time consuming. Nobody does that in Vincy anymore. Not saying you are wrong ,but things just change for the most part Just wash, chop, go nowadays.. this soup looks so delicious.

      To be honest the ones I cooked I didn't strip them that is granny style lol. She even got us picking the tip of the callaloo leaves. Lol!

      No you do not have to scald the turkey. Cook it with the callaloo. Around 45 minutes to an hour you can take your knife or your hands to check for tenderness of your turkey. Then put in your provision, vegetables, etc.
