    Cassey, I'm truly saying this from the bottom of my heart, I'm truly happy for how far you have come with your channel and what you're doing. I've been following you for a while & you have truly made me love myself. I know that you hear this all the time, but you are a great inspiration & a kickass role model.
    Please don't stop what you're doing, & keep progressing with whatever life throws at you. You have taught us that when life hands you limes, you make key lime pie. lol

    This is so awesome! Thanks for posting it!
    As an alternative (or in addition if you really want to go for it) to the shredded coconut (which sounds yummy) you could also use "whipped cream" made from coconut milk.
    In case anyone is interested:
    To make non-dairy whipped cream, open a can of coconut milk and remove only the solid part at the top (you can use the liquid in a smoothie, to cook rice, etc. -- no need to toss it).
    Just whip the cream from the coconut milk as you would regular cream and, if you want, add a touch of sweetener and a little vanilla extract or scrape in a vanilla bean. If you want the cream to hold its form, you can add something like agar agar.

    I am curious about the raw tapioca flour, does that not need to be cooked?

    I don't know why so many people say it doesn't taste good...
    I tried the receipe... thought it would be a catastrophy (I had very little faith in those ingredients...) and the moment I tried it... O-M-G!!! It was SO GOOD!!!
    Even my parents who always make fun of me because I normally really suck at baking where completely impressed!

    Man, I want whatever grocery store she has! Everything is so expensive here! Walnuts especially, would be about $5.00 for that 3/4cup... >_>; This looks yummy though!

      Should you have informed me two months ago I could lose fat without starving myself or counting calories every day, I wouldn't have believed you.     I just made this but replaced tapioca flour with flaxseed meal and used pecans instead of walnuts. Didn't have medjool dates at hand but deglet dates worked fine. Topped it with sweetened coconut flakes a dollop of greek yogurt and it tasted great :) Thanks for the recipe, Cassey!

    I made this cake today and it was a bit more on the pricey side with the ingredients... but OMG! THIS IS SO DELICIOUS!!! I was very sceptical because I thought I didn't like avocados or any citrus cake.
    but this changed everything!

      How it tastes may depend on what a person eats already. If they are used to eating like this it’s probably is really awesome but if the person lives on donuts well..😂😂

    Tapioca is typically used as a thickening agent but does not have to be heated in order to thicken and it thickens better at cooler temperatures. I'd say you can use any other starch like cornstarch but I'm not sure if they can be consumed raw.

    I finally made this! Used rice flour instead of tapioca flour, and I kind of eyeballed everything LOL. It was a success!! In my opinion, the best part is the crust!

    You can buy them in clear containers with a red lid for I believe $9 or $10 at the real canadian superstore/the real atlantic superstore/loblaws. The grocery chain could be called something different in Toronto. They are found a bit past the produce area but are only sold during late spring-fall.

    I think you can definitely substitute it with any nuts. I've tried cashew nuts and they work perfectly fine, in fact, raw vegans use a lot of cashew nuts in making "cheese" or "pie crust".

    Agave Nector. Vegan and super sweet. I used it in Banana bread. I make mine Vegan, banana's, wheat flour (you can never tell the difference when you bake it), Agave Nectar, and Flaxseed w/ water (substitute for egg in baking recipes)

    really really delicious! I followed the whole recipe but ended up doing sugar and lime to taste. Added allooottt of lime, and after I took it out of the freezer added even more lime ;) just make sure you have the feeling exactly as you'd like before putting it in the crust!

    i also replaced stevia with honey and it was great! but don't you think the avocado will become brown if its not eaten the same day? btw can you please do a clean version of KitKat!! that would be amazing! keep up the great work, you are so motivating!!

    Cassey, that was fun!!! but i would put the crust up the sides and use lemon only because i have lemons!!! and maybe use chia seeds or arrowroot powder as a thickener 'cuz i have that on hand too!!! :)

    I think you can use corn starch for tapioca flour, since that's what I used and it came out all right.

    cassey! these are actually regular limes you're using. key limes are the size of ping pong balls, maybe even smaller, and are waaay more sour than regular limes. i really love your cooking video btw! :)

    Whaaaat? :D In Slovenia there are a lot of walnut trees, a lot of people have their own and they pick the walnuts in fall when they fall off the tree. So it's basically for free or quite cheap in stores.

    To get out the seed more effectively, hit the seed while in the avacado with a very sharp knife and then pull the seed off with your hands if it is loose, or with something that is rubber.

    Are you allergic to all nuts? If not, almonds are nice too. But if you are, not sure but perhaps a mixture of oats and flax to keep it together? Along with the dates. I would just experiment with that. Raw vegan desserts are heavy with the nuts so hope you find good alternatives!

    Agave Nectar isn't artificial. I can't have any artificial sweeteners, it causes fibromyalgia like pain for me. I seem to be sensitive to it. I read somewhere about that and cut out all soda and artificial sweeteners and it's helped cut the pain a lot. Also, noticed less swelling after workouts in my leg where I broke my foot, since I stopped eating Stevia/Splenda and diet sodas.

    I just made a mini version of this, and I tried the fillings a little. It was delicious!! Now I am just waiting for it to freeze for a few hours(was it like 1 hour?). CAN'T TO TRY OUT YOUR OTHER RECIPES SINCE I JUST GOT MY FOOD PROCESSOR AND BLENDER TODAY~~

    I live in Florida, and can get good sales (e.g., I got 2 large avocados for $3.00 at Publix, making each only $1.50)... This is one happy girl! I'm trying this recipe soon.

    Most of the ingredients are things you can buy in those individually or by weight. Things like stevia and tapioca are commonly used in other recipes so it's likely that you might already have them on hand if you do this kind of baking.

    love the idea, great concept. the crust was amazingly good and simple... but i put starch instead of tapioca powder and... it tasted powdery... i don't know if it's the same with tapioca?
