Exactly! When you buy an expensive ingredient, like yeah, it may seem expensive but when you see how much you can make out of it, it is freaking awesome! I buy my almond milk for $2.50 (which is the cheapest, lowest in fat/sodium/sugar/calories I can find) and it lasts me for about a week! And sometimes it is on sale for like $2, so I buy in bulks, like 3-4 of them and then I just stalk them in my pantry cause they stay good for so so long, so I can use it whenever I want! See? It is so worth it guys. Cause you never make one pumpkin pie out of 1 liter of almond milk, you make 4 ! :)

I think my oven just sucks but I baked mine for about an hour and 15 minutes. Wasn't as runny and got rave reviews.
Cassey, I would recommend buying a different brand of almond milk. Almond Breeze (and many other brands) contain carrageenan, which is likely a carcinogen. Probably best to avoid :)

Hmm well pumpkin is kind of a regional thing, but you could just take whatever nuts are less expensive for you and make your own flour. And I'm not sure what kind of squash you have around you, but canned yams/sweet potatoes or any other kind of squash canned should work. Or you could make your own puree by roasting whatever squash you have available and throwing it in the blender. ^_^
Update: I went to the store and bought a japanese pumpkin for $2, which I will steam (and also use for smoothies), and some almonds that I will grind in my magic bullet. Do you think I could use half coconut flour and half almond flour?
Yay! And as far as the coconut flour goes as long as you like that flavor I think that'd be great! It will be crumbly so feel free to add a bit extra coconut oil if you think you need it. ^_^

What if you cut the ingredients by half and make a mini pie or something like that? Then you won't have an entire pie to yourself but you still get to enjoy it.

And not many grocery stores have an organic section and if they do its very small. Plus, a bag of almond flour or coconut flour can be around 7 or 8 dollars and its a small bag. May be clean eats but not that cheap especially for someone living on their own with rent and bills to pay for.
Try to forget about the brands! You don't need trader joe's or whole foods! Just go to your regular supermarket/grocerie store, go to a baking section and there you will find a MUCH cheaper, but the same quality coconut/almond flour. Oh and try to search for them on a lower shelf cause the most expensive products with the nice packaging, will be layered on the middle shelf right before your eyes. Don't look there! Look lower, for the product with not-so-nice packaging :) Ok, maybe it is not going to be organic, but it will have the same nutritional value for a cheaper price. I live on a budget as well, but I try to find ways to make things cheaper, more access able. That is what I do, and it worked for me amazing so far :)
