മലബാർ ബിരിയാണി ആണെങ്കിൽ ഇത്രയും ചേരുവകൾ ഗരം മസാലയിൽ വേണ്ട.
ഏലക്കായ, ഗ്രാമ്പു, പട്ട സമാസമം ചേർക്കുക പിന്നെ ജാതിപ്രതി, ജാതിക്ക, പെരിഞ്ചീരകം, ശാഹ്ജീര എല്ലാം കൂടെ ഒരു അളവും മതി.
ബിരിയാണി മസാലയിൽ ടുതൽ പച്ചമുളക് ചതച്ചത് ചേർക്കണം, മുളക് പൊടി മഞ്ഞൾപ്പൊടി ഒക്കെ ഒരു കിലോ ഇറച്ചിയിൽ ഒരുനുള്ള് മതി .പെരുഞ്ചീരകം പൊടി 1 ടീ സ്പൂൺ, കുരുമുളക് പൊടി ഒരു ടീസ്പൂൺ ചേർക്കണം. മല്ലിപ്പൊടി തീരെ വേണ്ട. ഗരം മസാല ഒരു ടീസ്പൂൺ. മസാലയിൽ 1 ടീസ്പൂൺ വിനാഗിരി, പൊരിച്ച ഉള്ളി (ബരിസ്ത) ചേർക്കണം. ഈ രീരിതിയിൽ ഉണ്ടാക്കി നോക്കൂ.കിടിലൻ ആയിരിക്കും ഉറപ്പ്.
