      Gazpacho is a favorite use for our excess tomatoes. Unfortunately this year's crop was way below our average, so no excess.

      I’m new to gardening but I had a bumper crop of wonderful tomatoes last year so I simply washed them and froze them whole in gallon baggies. Well thanks to you I now have a new recipe I’ll be trying tomorrow. Thank you!

      I don't like piure soup.. I prefer to keep the vegetables chopped... When I'm losing my teeth I'm going to blend all the foods 😁😂.. I can call this baby food 😀

    Guys, I have been using this recipe as my tomato soup for a year and I've only gotten positive responses, to make it a yummy creamy soup I use 1 pack of coconut power mixed into 1/2 cup water. Everyone loves my soup with garlic bread! Thank you so much! 🥰

      This is a wonderful tomato soup. Love this recipe, I followed it almost exactly. I might have put a bit more garlic in and I don’t top the finished soup with olive oil.

    My first experience with tomato-basil soup was at a great local restaurant in San Mateo, California (on 4th, I think, near the El Camino Real). It was delicious, as I can tell yours is as well. I like the way you cook. I live in the Philippines and tomato soup comes in a can. No one here makes it because tomatoes are "sour" for Filipinos and they prefer to have sugar in everything, including spaghetti sauce! If I had a kitchen just half the size of yours, I'd be making lots of my own Mediterranean dishes, following your recipes and methods. Real enjoyed you video!

      Very interesting! I will say, I actually like making this soup in the summer here because it's the best time of year for tomatoes :). They can be less flavorful in other month, for sure. Also, thank you for your kind words!

    I slice tomatoes and dry in my 9-tray food dryer and then keep them in an air-tight container. I use them during the year in sauces and soups, like taco soup, spaghetti sauce, and many other uses for tomatoes.

    I'm so glad I discovered The Mediterranean Dish, I love how delicious yet simple the dishes are; I love that the website recipes have a "Jump to the Recipe" tab; I love her enthusiasm & funny expressions like "Thank you for coming" when she throws something out lol; if she ever does get picked up by The Food Network, I hope she doesn't change a thing!

    Hi Suzy dear! I just made your Roasted Tomato Basil soup tonight, and it is THE BEST I've ever had. Your recipe is AMAZING and so rich and flavorful, and fresh! The added lime at the end gives it such an unexpected zing. Thank you soooo much for all your incredible recipes (and your wonderful energy)! (P.S. I don't have a food processor, but I used my blender and it worked just fine. I didn't blend for long, so there was still a lot of nice texture.) 🙂

    You can also sautee bell peppers and mushrooms along with the onions and garlic. I also top mine with Parmesano Reggiano.

    nice work , thanks for sharing the complete recipe. made it exactly as written and came out great.. thanks much. Here is what I would suggest.. First dont use a metal pan as they will change the flavor. Use an enamel coated dutch oven. next, for the sauce to build that extra tomato flavor, get a can of San Marzano peeled tomatoes, scoop out only the tomatoes and get rid of the sauce (that is usually a cheaper tomato), add some olive oil and spices and blend that separate. use that as your sauce.

    Try roasting the garlic WITH the tomatoes, and tone down on Canned tomatoes and Olive oil o.O

    I love this recipe. All I do different is I roast the onions and garlic with the tomatoes and they all go into the processor.

    I watched this at 5p and had a bowl at 6p. It really was delish. First time I've ever had it! I
    used diced tomatoes (great value brand :^) as I had no fresh tomatoes. didn't have cumin either and I added a bit of cayenne pepper. So good. Thanks for the easy recipe. Best, p

      eat Keto and I'll be searching your site to see what I can alter to comply. The beloved pasta, rice, bread is sadly restricted but once you adjust, it's not too bad. Thank you again! paula

    It was tasty, I did it but unfortunately i didn't had fresh basil so I used dry and then i used squeezed lemon instead of lime, but it was great. Will definitely do it again.

    So... I got excited when I saw this recipe but.... when I tasted it, I could taste the "can" from the canned tomatoes. I know I'm sensitive to anything in a can and can't stand coffee made in a metal percolator so why did I add canned tomatoes, San Marzano, top of the line to boot!!!!???? I'll try this again and maybe add some celery and a bit of cauliflower to round out the acidic taste. I just feel like it needs to be toned down or balanced out a bit. I did add a balsamic drizzle to my bowl which was an enhancement. Best thing ever was that I served it with a homemade sourdough rye bread that had chopped olives, dried tomatoes, and pickled red onions topped with lemon tahini sauce. It complimented it nicely. Thanks for inspiring me to try something new.... I'll keep working with this recipe. :-)

    This is really cool! It tastes really good! But the only thing is that the heating the tomatoes is a little hard. I saw another video and they used only 3 ingredients. It tasted as good! But still, i love this dish!

      The night I made it and did a taste test, I was like, "meh". Once I did some tweeking and let it over night, it was really good!😋
      Nothing like fresh summer tomatoes from a garden though.

    In that hot olive oil I add cumin seeds and add the crush tomatoes and adobo seasonings no black peppers or anything spicy hot!

    I roast my onions and garlic with the tomato in the same pan. It's tomato soup.... easy enough.

    I saw your first time your UA-cam, add Red chilli 🌶 (Kashmiri)powder, you will get nice colour.
    Add one spoon 🥄 of sugar.
