No one answered the adapter question, on Amz there are adapters for Coleman, and as far as I can see all or most Colemans use the same type regulator. As far as the flame adjustment, on YT there are plenty of videos on solving the flame output, comes down to removing the nozzle assembly and removing the grease on them with either silicone spray or white lithium spray and screw it back in, total time ~ 10 minutes.
3:32 it could also be a short-fall of your pan choice. Most camp cook sets are extremely thin-walled and susceptible to massive heat fluctuations. Usually, I have seen roux cooked in cast iron or, occasionally, another heavy bottom metal pot that retains and regulates heat well. I am not ragging you in any instance; just offering another possible view. I am not a troll, I honestly love your content and wouldn't take the time to comment if I didn't.
Your family gave you sensible gifts that are truly usable. You will get a lot of use from both the stove and the table. ❤

That’s a great point. Aluminum camp pots are notoriously bad for head distribution.
