I just ordered my first box (my only box money tight right now) and I’m hoping it’s great! I’ve always wanted to go to Japan and try new things! Recently I tried I believe it was either a squid tentacle or octopus tentacle but it was really good! Seasoned and I believe pan fried so it’s suction parts were very crispy! Love your videos!

I think youre right, drying like he did creates a jerky rather than crispy texture. Is it possible to freeze dry things at home? Id love to see a take 2, personally!

That was fun. I like that Jun was honest and said the other squid chip was better. My cat comes running whenever he hears any snack bag crinkle. He likes to lick the flavor off of chips or whatever the snack is.
i’m not surprised that the squid went well with peanut butter 😂 one of my favorite snacks is ojingeo ddangkong which is a korean snack that’s little balls with peanuts inside that have squid on the wafer. it’s salty and just slightly sweet from the peanuts
The sakurako chips look deep-fried twice (the colour is darker); that definitely would add a lot of crunchiness, altough I dont know how much it would take away from the toughness and chewiness of the homemade snack 😉. Great video as always!
He didn't tenderize his ika (squid). With squid, octopus, abalone, etc, you need to pound it with a mallet to break down the muscle tissue. All meats that we eat, whether it be chicken or squid, is simply muscle tissue...also known as myofobrils or muscle fibers. Pounding meat with a mallet breaks these muscle fibers down into smaller pieces. Think of muscle fibers as chains, by pounding on them, you're breaking each chain link...so in the end you'll still have a chain, but it'll just be much smaller links of chain. When we bite our food, our teeth are breaking these chains when the meat is "tough"...so by manually breaking these chains even before cooking, the final product is already broken down so the food appears more "tender". Sorry, just took more than my share of food science courses at university. 😄
Several comments have said the sakurako squid may be freeze dried instead of air dried. I think Jun made squid jerky and then fried it, not realizing that drying meat makes it tough and chewy.
I wonder if flattening and pounding the dried squid would have made it softer and more tender to chew? 🤔 No matter the results, I love seeing these snack comparison videos. ❤️
7:59 i think the same, they either flattened it with a roller (similar to those used to make thin dough, perhaps) or hammered it thin. By the way it breaks, there's no way it's the same as Jun's. Also, i know he's looking for a specific crunch, chip like effect, but if the pre-tempura slices would be made bite sized, i personally wouldn't mind the chewiness of the squid. It's good to exercise your teeth, all in all, humanity has quite a bit to suffer from not chewing through hardier stuff, our jaws for one aren't even remotely as good as those of our ancestors even 2 or three generations ago. So chewing hardy stuff is a good idea (obviously within limits, you don't want to break teeth, enamel or damage your gums).

I had these this month too! I think they either fully dehydrated the squid somehow to make it crunchy, or they ground the squid into the batter, then just fried the whole thing and separated it into chips after it cooled. It didn't feel like a whole piece of squid was in the chip.
My grandpa and I LOVE squid tempura chips! Theres a local brand here in Hawai'i that makes them regularly, and its so nostalgic eating it. Squid and even cuttlefish related snacks are pretty popular in Hawai'i. We even have tako poke!

I used to do some work at an aquarium, where we would chop up squid to use for feeding. The cartilage that was pulled out of the squid is the pen, which is an evolutionary remnant of its shell.
Jun, try scoring the squid, then blanch it in boiling water for 30 seconds, dry it completely, then flash fry in oil, cool completely then batter and fry it. It is similar to the process of making chicharrones (fried pork skin).

Maybe you could've fried the dried squid by itself first before frying it with batter? I feel like that would make it a bit crispy. Here in the Philippines, we pair dried squid with vinegar and eat it with rice. 😋

squid + peanutbutter makes total sense, in indonesia they make a lot of peanut sauce which... is basically peanut butter with a couple extra steps :P we put it on like, rice or satay so makes sense it would go with squid!

i think maybe try turning in into a squid paste mixed with a starchy paste, but cook it until its a it forms a dough ball. Then slice it into pieces to dehydrate. Kinda like making shrimp chips but with squid. Alternatively maybe thinner pieces will puff up better in the oil, without batter that is. Then season it after?
