    Thanks for the recipe, my wife who is of British background just loves it. Here is a recipe for the "cousin" to the clotted cream (scientifically speaking almost the same thing), kajmak, food item declared and protected as Serbian national heritage by UN. There are some fundamental differences in the process but there are some common points too. It starts from the real milk as in going to countryside and finding farmers raising cows naturally, getting it without any further processing, from the cow. It is expected to have at least 8% fat! From 10 liters of such milk one is expected to get 400-500 grams of kajmak. Boil the milk (just to come to a boil) and put it (same as for the clotted cream) in shallow pans in a similarly thin layer. Let it cool overnight (8-12 hrs). Similar surface structure as for clotted cream will form on top. Same as with the clotted cream remove it to a new vessel. Add to this 1% to 1.5% of salt (by weight) by personal preference (but not more or less as less will mean quick spoilage and more change in the structure) and mix. Now the harder step than finding milk directly from naturally raised and bred cows, at least for people in the West: find a little wooden barrel of the size big enough for the amount of kajmak you made and store it in it in a cool to refrigerated place to age it. Early on it is more milky and more clotted-cream like, within a month or two it takes more buttery and aromatic form (this is my favorite stage of it, like more intense version of clotted cream, denser with more concentrated flavor) and beyond 3 months it takes on a very creamy but crumbly texture akin to "Feta-butter" (I know there is no such thing but for descriptive purpose it will do).     Thank you for the tutorial; I used it as a guide to make this overnight in my Hamilton Beach 8qt. slow cooker, using the “warm” setting. I ended up with more lovely, golden crusted clotted cream than I can possibly use.

    S’funny, I grew up in Westcountry UK, loving clotted cream, which is freely available. But I never knew how to make it until I came to UA-cam and got taught how to do it from the other side of the Pond. Great tuition thanks, I am going to try method.

    Every clotted cream video on UA-cam seems to put people into a frenzy. It's just so heavenly and the simplicity is part of the miracle. It really is an ideal thing to make in an Aga overnight, and there is no risk of the oven switching off 😊.

We grew up having tea parties with my great grandma, grandma, mom and aunts and now with my niece so 5 generations of women celebrating each other over tea parties our favorite is clotted cream with our scones and now I can make it!!!     Hello, Mary. Thank you very much for such a lovely video. Simply wonderful. I found your method interesting. My family is Keto. We enjoy clotted cream with fresh berries or atop homemade Keto desserts in place of whipped cream. I’ve always made my clotted cream with the same shallow pan, but I preheat my oven to 320 degrees Fahrenheit before adding the dish, then turning off the oven. I do this in the evening before bed then in the morning, I remove the dish and refrigerate it for four to six hours. The surface isn’t golden brown nor as thick but it is lusciously rich and smooth. I have used the “whey” or separated liquid as the base for ice cream and puddings. I store the clotted cream in air-tight containers upside down to inhibit bacterial growth. I have just found CarbQuik and will be following your directions for scones with it. Thank you!

    Just made some! The best I've made was using fresh or pasteurized (not ultra pasteurized; due to elevated temp with process) and UNhomogenized heavy (whipping) creams. The two brands I've found that make excellent clotted cream in the US are Ronny Brook Farms and Sky Top Organics Farms available at Whole Foods. They both make excellent clotted cream that is most closely to what you'd get in the UK. 🤓🙌🏻

    Hi Mary! I've been watching how to make clotted cream lately and your video is the easiest to follow. Maybe it's because I love your videos anyway... Anyway, a tip I have for you is when the cream is cool and ready to be separated, lift back a corner and gently tilt the pan to pour the liquid out instead of scooping the clotted cream off the top. Thank you for your precious videos, I'm so glad you feel they are important to share, because they are!

    In England it's made with glorious unpasteurised milk. I worked for a lady who had a Jersey herd and the cook would put the fresh milk in a jug, leave it to 'set' then skim off such thick glorious cream it was almost chewy! It went beautifully with her home-made scones (pronounced sconn - like 'gone', not scohne like 'stone') and freshly made jam from home-grown strawberries. 💖💖

    Omg about 3 years ago I watched a video on clotted cream and the person said I could absolutely NOT use ultra pasteurized cream at all. I'm so glad I found your video. Thank you so much. But I'm using a stove top method I found today. My husband isn't happy about my using the oven method. Don't ask me why. He's cuckoo.       Technically, clotted cream should stay fresh in the refrigerator for 3 to 4 days but I found it stays good for a week or longer. Hope this helps. Love, Mary❤️🤗❤️

    Preheat the oven to temp, put the cream in and turn the oven off. It does not bake overnight.. it sits in the warm and clots. Do not open the oven at all but leave it turned off. When you bake it with the oven turned on it gets hard. I am telling you this as someone in England... over here they say turn the oven off. Just letting you know. The clotted cream will be softer and NOT crunchy. It is one of my most favorite things in the world!!!!

    I love clotted cream ! It is a stable item for breakfast at the Iraqi cuisine ! It is made from buffalo milk !! We enjoy it with bread and drizzle of either honey or date syrup! However in the US I make it from whipping cream like yours but I use a bigger tray for 5-6 hours and almost nothing left under ! Also I make it in the microwave in 15 minutes!! Indeed it is Very delicious ! Have a great day !

    I am an old Devonshire born lady, my grandma used to make this by using full cream milk (when milk used to come with cream on the top). In a bowl on-top of a saucepan of water on a very low heat for hours, then left to go cold and the crust (clotted cream) taken off. I was a little girl during the war and remember having to drink the scolded milk left underneath when cold, never liked it, but nothing wasted in wartime. !!!!

    Clotted cream was in the past a way to preserve the cream. Here in the UK it is mostly used in Devon and Cornwall for cream teas.
    In Devon they put the cream on the scone first then the jam, Cornwall the other way round. Now it is found in supermarkets all over. Though in the past when I was small it was often sent by post from my aunt, who lived in Devon , my family live in kent

    My slow / multi-cooker can do it. I made a yogurt (not the normal kind you find in the store) in it that needed a specific temperature. I kept an independent thermometer in it to make sure it was on target and it held the temperature for 12 hours. The multi-cooker says it can be set between 86 to 400 degrees.     A slow cooker will work with this. What you have to do to make that happen is get a rectifier & wire it in series with the power input. That will cut the power in half & also the heat output of the crockpot.
    A rheostat capable of handling the wattage of the crockpot can also be used for a finer control of the power.

    I tried this recipe with a slightly larger and shallower glass baking dish (16 in x 11 in x 2 inch) using 3 x 473 ml of 35% M.F. whipping cream (5 g of fat per 15 ml). It worked beautifully. I followed your method exactly. On warming mode my oven shuts off after twelve hours. Perfect! I used 175 F as you recommended. My oven goes down to 145 F. Is there anything to gain by doing it at a temperature lower than 175 F?
    The last time I was in Cornwall, England I bought a 3 lb slab of clotted cream from one of the farms. Your recipe produced something very similar. You made a comment about Devonshire cream. From what I remember Devonshire cream is nothing like Cornwall's clotted cream. It's too runny to put on a scone!! I much prefer clotted.

    I M spoiled because I LIVE in Devon England so clotted cream is readily available here and it's amazing... so good that you can make though.... I'm glad to see Mary, that you put cream first then jam that is the devon way and in my opinion the best..... The cornish put jam first then cream... Not right 😂😂😂

      We went to devon and cornwall on holidays and enjoyed teas with clotted cream cakes and scones. My dad never forgot that the locals called it "debin cream or dame cream".

      Just got started during this isolation stuff. I bought the fermenting equipment, special tops and do dads. Started with sauerkraut, then to dill pickles, which the regular canning way never worked for me, these fermented dills are amazing! Then I did carrot sticks. All super yummy. Then I discovered your site and I made your Irish soda bread, super yummy! I plan on making your sauerkraut, (I'm almost out) and pickles and who knows what, I need to get more jars! I like how you explain things. Not just the how but the why of it too. I also like that you whip the clotted cream!! I made it once this past winter (Not yours) to try it, but wasn't a fan of the crusty part. In Florida we did a Downton Abbey themed English tea (on the rocks) luncheon which required clotted cream but since there were 320 ladies we decided against that! I also have beans to try your sprouted recipe. I have a recipe for a traditional Canadian bread you might want to try. It's called Bannock, and was made by the fur trappers. Since they didn't have ovens, they made it in cast iron pans on the open fire. I use a regular heavy pan on my smooth top electric stove! Super easy and it has a history and I know you like that. Let me know and I can email it to you.

    I LOVE clotted cream! Just discovered it at HEB about a month ago, but at $8 for a little bitty 6oz jar, I'm spending a LOT on clotted cream! So I'm REALLY glad to find this video! I do very low carb/ keto and anything I can find to make my food yummy and interesting since I had to give up grains n sugar, I'm all on board with!😍 I also just discovered creme fraiche- mmmm! I'm curious, can you add salt or monk fruit to the clotted cream or would it change the consistency?

    Looks delicious. I'd have to make a small batch since all three of us only can eat a little of rich tasting foods at a time. Lee and Daniel are visiting their friends Mary and Charlie. I'm replaying Rune Factory Frontier. Runey managing is a pain in the beginning. It's nice seeing all the villagers again. They are all very kind and the majority of them are cheerful. Kross is sad most of the time but I can understand. He was a soldier who lost all of his friends and he's also sad that there are no monsters in town. My character has amnesia. He can't recall his past prior to meeting Mist in the previous game which was Rune Factory 1.

    Mary, I found a Nestle product called Media Crema Table Cream, it is from Mexico. It’s very thick, thicker than whipping cream. I’m going to try it for the Clotted Cream, I’ll let you know how it turns out. Thank you

      with all due respect, supermarket clotted cream does not compare to home made.
      I know it is convenient, god knows, I have done it more times than I care to remember.
      Since I live in Germany right now, I make my own, no comparison.
      My visiting friends from UK are of the same opinion. "pure loveliness", they exclaim :)

    Great video! I live on the edge of Devon next to Cornwall and we have a wonderful local clotted cream maker, so I've never even considered making my own...but now I really want to give it a try :) You've probably heard about the age old dispute between the two counties over how to eat a scone...I prefer it the Cornish way with a dollop of clotted cream on top of the jam, much to the dismay of my family haha!

      Hi Ash, That is a great question. I don't know. I have never tried it. I think it would be a matter of whether or not the non dairy product that you used had a high enough fat content. That is the key with clotted cream. You need to use something that has a high fat content. Hope this helps. Love, Mary

      Traditionally, clotted cream should keep about 3 to 4 days in the fridge. But I think it’s probably fine up to about a week. Hope this helps. Love, Mary❤️🤗❤️

      Mary's Nest Lord willing I will be heading back to the cabin in a few weeks. The job is winding down but it has been a huge blessing. Our 18 yr old son started work out there with Jerry and is doing great. With so many suffering and out of work he really appreciates the opportunity. He should be able to stay on after Jerry is finished. I’m so out of sorts right now not being home but can’t complain because God is in the details.     Mary, first I have to say, your hair looks amazing! With my “Covid hair” this grandma looks a fright! 😂
    As for the clotted cream it looks so delicious! I have sent this link to one of my sisters. We get together for a tea party complete with scones, clotted cream and homemade jams & jellies about once a year with our other sisters, Mom and our daughters. She usually brings the cream and I usually make the scones, it’s great fun. TFS and stay well!

      Mary's Nest I am 61 (and a true blond) and a few years ago I stopped colouring my hair, it’s actually pretty BUT...I have a lot of natural curl so with that and the length it’s NOT becoming. However, your looks wonderful in both colour and length, lucky you!

    Hmmm, thought that carton looked familiar...made a trifle using that brand whipping cream for the 4th ;-) As part of my quarantine therapy, I've been making scones every Friday for breakfast looking for the perfect recipe. Think I've got that, now to move on to the clotted cream!

    Oh my gosh, you are adorable! ❤️ Big hello from Alberta, Canada! Sweetie, I am soooo going to try this! I had no idea that this could be made at home! How I wish I could get ‘raw’ or unpasteurized cream, but if you can believe this, it is ‘illegal’ in Canada. :( I am from Nova Scotia, Canada and was able to get it from a local farmer who trusted me (can you believe that marijuana is legal here, but unpasteurized dairy is illegal?!). Anway, I‘’LOl try it with my 35 percent store bought stuff sometime and let you know how it turns out. I LOL when you tried the scone/cream/jam-it was priceless...that would soooo be me upon tasting that! I can’t wait! Haha! TY so much again for your down to earth approach to leftovers too (I would totally save that other stuff and bake with it). God Bless! Ps...Can you tell me how long this will last in the fridge or can it too, be frozen (I doubt it-haha-the actual clotted cream) and would mason jars be preferred over plastic? Again, I imagine glass is best. TY!

      I understand completely! It amazes me that raw milk is “illegal” in some places. Given what is legal...it makes no sense at all!! 🤔🤔🤔 The clotted cream should stay fresh about 3-4 days in the fridge. But I think even up to a week is fine. As to the liquid, yes, you can freeze but if you use glass make sure that you use a wide mouth jar and leave plenty of head space so it doesn’t break. Thank you for visiting and for the kind words!!       Oh my gosh, you are an absolutely gem! TY for writing back to me & I will certainly check out all of these links~I don’t make a lot of my own traditional foods (yet), but I’m certainly passionate about it and know I need to make the time to because for one, they are simply far healthier and delicious and for another, it is likely more economical (if not, I dare say ‘safer’ to consume). (i.e. I drink ACV on a daily basis and want to make my own & I saw your vinegar link! ❤️). I make my own bone broth and mostly follow a.keto-carnivore liestelye., which is why your video which came up on the sidebar regarding clotted cream totally caught my eye! Haha...There’s room for treats in my life such as those amazing scones & jam, even though following keto, as I do Intermittent Fasting and ‘make’ room for carbs on occasion. I’m so excited to have found your channel & sincerely appreciate your passion for traditional cooking and your completely sweet personality! ❤️

    Tried some of the fancy canned Devonshire cream. It wal like thin sour cream and tasted awful! Never thought I would like Clotted Cream, but your version sounds more like what i expected. Will try it, thanks for the recipe!
