Jack fruit is eaten at many stages of the fruit's growth (Baby fruit to super ripe). It's generally made into different types of curries, depending on the type of jack fruit before it's ripe. The old man had little mounds of jack fruit seeds that are super nutritious (people used to say that three seeds have the nutrients equal to an egg). If you want it ripe and sweet, you have to get either 'varaka' or 'vala varaka'. 'Varaka' is the ripe fruit, but not too ripe (most people's favourite as a dessert). 'Vala varaka' is super ripe and mushy, and a few people like it this way. The jack fruit you bought isn't ripe and is sold for making curries, unfortunately. Next time ask for 'varaka', that's the one you enjoyed at one bazaar.
