This Big Easy OTF, and the accessory kebab rack, is a great way to do shish-kebabs. As is the case with any gas grill there is no charcoal flavor. Also, foods that get real mushy and tender as they cook, you have to be careful with , as the heavier pieces of will crush them. I learned the hard way with sirloin and mushroom kebabs.. I no longer alternate them on the same skewer. the steak chunks and mushrooms are now segregated to their own skewers. I’m considering attempting kafta with this set up.
Love that idea vertical skewers. They look delicious. BTW I made some of your SWAT marinade and put it on a tri tip and it added a whole new layer of flavor. Thanks 👍
Yea, SWAT is simple and easy to mix together. It works well, though it is simple, but you can use at as a starting point and make it more complex, add garlic, onion, lemon or lime juice, wine, or vinegar. Add herbs, chili peppers, what ever have you. In the end, it works just fine kept simple with those three ingredients. Tabasco, works best in it compared to other hot sauces, because it has about the same consistency as the other two.
