- Indulge in this Vegan Scampi Scallops Linguine. This can be made for a special occasion dinner or just because. Linguine tossed in butter garlic and cheese, need I say more. This simple recipe is easy and light on ingredients, but guaranteed to impress!!!
2 large or 3 small King Oyster Mushrooms
4-6 cloves of garlic
1/2 yellow onion
Olive oil
Vegan butter
Fresh Spinach
Linguine pasta
Coconut milk full fat (chaokoh brand)
Vegan parmigiana cheese
Furikake Japanese seasoning

Instead of processed "Parm" you can make a simple one by mixing together;
1/2 Cup of Organic* Hemp Seeds
1/4 Cup Nutritioinal Yeast
1/2 Tsp Organic* Onion powder
1/2 Tsp Organic* Garlic powder
1/4 tsp. fine sea salt.
Mix well, taste it and you can always add more salt if you wish. Healthy and nutricious! It stores for a couple months in the fridge. If you use a lot you can double/triple the recipe! *you can use regular seeds and powders if you don't have organic.

I made this today and it was delicious! So flavorful, and you're right about not tasting the coconut milk at all. The meal really gave off the flavor of scampi. I think the garlic is what really makes the meal scampi-like. Thank you for this recipe!

I do believe that's "Scallop Alfredo." Lemon, White Wine, Garlic, and Butter=Scampi. But with that being said, YOUR DISH LOOKS ABSOLUTELY MOUTH WATERING!

Cooking with Coconut milk rocks! And I have made Mushroom "Scallops" and they replicate them very well. With all the cheese and sauce it appears you made a Vegan scallop "Alfredo" not a "Scampi" ~Looks delicious!:)~

OMG!! I have been saying for a while I wanted to try cooking some vegan dishes. I made this for my meat eating boys. They killed it!! Don’t even have leftovers for lunch tomorrow. And my Jamaican kids don’t like anything coconut 😂. I am so glad I found you and have plans for the vegan fried chicken this weekend. 😊 By the way your skin is beautiful and stop picking up the pot without a potholder. I do the same thing. My kids say my hands are made of asbestos 😂

Another delicious recipe. And without chancing upon a gritty scallop! One thing I'd substitute is leek for the onions. Leeks, to me, tastes both like an onion and a garlic. I will add the garlic, too, though can't have too much garlic (actually, you can. Used a few cloves too many in a recipe once, and after I ate it, the room was spinning! Look it up, it's a thing).
Leeks are delicious, now that’s a tip 👍🏽

I used grape seed oil for frying
The vegan Parmesan cheese is from Trader Joes so is the vegan butter.
The furikake is a Japanese seasoning made from seaweed you can find it in Asian markets or in the international aisle of your supermarket 👍🏽

I made this recipe for dinner tonight - first time we’ve ever had king oyster mushrooms - and it was incredible. I did make a few tweaks for our taste - I didn’t have the seafood flavoring so I sprinkled lemon pepper on the seared mushrooms. I also added some crystallized lemon and a dollop of vegan sour cream to the sauce. Thanks so much for sharing this recipe - we were blown away by how much the mushrooms had the taste and texture of scallops.

I made this but used real scallops (pescatarian) and hearts of palm linguine since I have to watch my carbs. It was delicious.
Ps I'm not a fan of mushrooms but will use them next time I make this to see if the taste is different.
