Recipe for the best marinara: Half a red onion Half a yellow or Spanish onion. Half a sweet Vidalia onion 2 28 Oz. Cans of Marzano tomatoes Half a can of tomato paste approximately 3 oz Five cloves of garlic One cup of white wine such as Pinot Grigio Fresh oregano and basil Finely chop onions and garlic, in a large pot heat on medium add some oil to the pan and saute the onions until they are translucent then add the garlic allowed to cook for a couple of minutes then add the tomato paste and mix well next add the white wine allowed to cook for a few minutes then add both cans of tomatoes. You can squeeze them in your hand before putting them in the pot or once they're in the pot you can use a potato masher to mash the tomatoes as best you can. Add salt and pepper. Allowed to simmer for at least an hour checking on it periodically making sure that the bottom is not burning. Finally chop the basil and oregano, remove from the Heat add the chopped oregano and basil. Once that's mixed in taste the sauce add salt if needed. You can then use a stick blender to blend it into a smoother sauce or you can use a regular blender and be sure and only fill the blender halfway because this is hot leave the top off cover it with a towel when you blend. This is the absolute best and easiest marinara sauce it will beat any Jarred sauce you will never eat Jarred sauce after this again. If you like you could add a little bit of cayenne pepper to make it a little bit hot. If you like mushrooms you could fry up some chopped mushrooms throw those in the sauce as well. This is an excellent base sauce you could add meat to it make it into a spaghetti sauce you can use it in lasagna or you could even use it as a pizza sauce. My favorite thing to do is to make garlic bread dip it into the sauce it's so good. **dont throw away parm cheese rinds, throw a couple into the pot with the sauce b4 you simmer 1 to 3 hrs, covered. Stir periodically to make sure bottom doesn't burn. Rinds won't dissolve, they'll flavor the sauce, discard rinds b4 blending sauce.
you need an iron skillet pan or steel sauce pan with a thick bottom, they will keep your dish hot even when the heat is off. it's a staple for most italian food and will cook your dishes really fast

Trish get yourself a utensil tray for on top of your stove. So when you set down a dirty utensil while mixing, the food residue won't fall down in between the burners and make it a pain in the ass to clean! But lowkey this recipe looks so easy and yummy to make, I'm gonna try it out!
Bolognese sauce recipe: 1/2 lb of Italian sausage sweet or hot whatever your choice. 1/2 lb of ground beef. Two stalks of celery Two carrots 1/2 a red onion 1/2 a sweet Vidalia onion One 28 Oz can of Marzano tomato sauce One cup of white wine such as Pinot Grigio Seven cloves of garlic 5 oz of tomato paste Fresh basil and oregano and Italian parsley Finely chop celery carrots and onions and garlic, in a large pot Brown the meat off remove from the pot set aside using the oil left from the meat if there's not enough add a little vegetable oil or olive oil you're going to want about two to three tablespoons of oil to saute your onions celery and carrots. When the celery and onions have become translucent add the garlic , salt and pepper, cook for a few minutes, then add the tomato paste mix thoroughly then add the white wine. Allow to cook for a few minutes. Add meat back into the pot with the onions, carrot, celery mixture, cook for a couple of minutes then add the tomatoes and chopped parsley. Bring to a boil,cover ,lower to a simmer and allow to cook for at least an hour, checking periodically to stir and make sure the bottom is not burning. Remove from Heat ,taste the sauce ,add salt if needed. Chop the oregano and basil add to the pot and stir it in ,ready to serve. This is excellent with any pasta this can also be used in lasagna. Regular spaghetti with the sauce is absolutely delicious be sure and undercook the pasta by 3 to 4 minutes add a little bit of the sauce to a small pan heated up add the pasta to that sauce with a little bit of pasta water and continue to cook the pasta in the sauce for 3 to 4 minutes until it's reached al dente. Throw in some Parmesan cheese and serve. It's so good.
Tips for this recipe : Cut tomatoes in half they will cook down faster, or you could use a 28 oz. Can of Marzano tomatoes. After breaking down tomatoes you could add a cup or so of white wine. Let it cook down b4 adding pasta. You could add a little half and half to make it saucier, you could toss in a couple of handfuls of baby spinach just b4 serving. It will wilt into pasta with no heating needed. Adding fresh basil and oregano the same time you add mozzarella cheese will really give it some Italian flavor.

I found it easier to cook with room temperature butter. Rather than pulling it out of the fridge and trying to work it down to nothing. It requires more work. I've had to learn this the hard way. Toast your pepper corns in your grinder before use. It’l be more flavorful and aromatic. Simply dump the pepper corns in a dry skillet low heat and stir till they start popping and you can smell the aroma

You can use pasta made from vegetable instead of the traditionnal one made from wheat, reduce the amount of butter you put in as well as the cheese. All in all this is not really a dish made too help you much on a diet😅 BUT still this way it's healthier and vegetable pastas (for me anyways) makes you feel full even if you don't eat much. i think its mainly because the water is warm and yeah the starch since the sauce for the pasta steams off too much water and u dont want a yoghurt consistency sauce.
get yourself a good set of flat top wooden spoons it makes it easier to move your onions and stuff plus unstick any stuck sauce because I accidentally cook on too high of heat sometimes and have to turn it down and hit the bottom of the pan to unstick it but it's not burnt just stuck

I love you guys 💜 make some chicken cutlets mash potatoes 🥔 that’s the easiest dinner I make 😂 season the breadcrumbs dip chicken in egg then breadcrumbs I don’t use flour then fry till brown I like mine crispy you can add some arugula salad with balsamic on top , any side as well veggies 🥦 I think mash potatoes is the best !! 💜💜 can’t wait to see baby girl !!! If you make some chicken cutlets shout me out 💜💜

Is it the starch from the cooking process that's desirable?
i think its mainly because the water is warm and yeah the starch since the sauce for the pasta steams off too much water and u dont want a yoghurt consistency sauce.
get yourself a good set of flat top wooden spoons it makes it easier to move your onions and stuff plus unstick any stuck sauce because I accidentally cook on too high of heat sometimes and have to turn it down and hit the bottom of the pan to unstick it but it's not burnt just stuck
