Thanks @TassieDIY branched chain fatty acids in lamb do tend to produce the very strong gamey smell and flavour, this can be dulled down using various herbs that are high in antioxidants, and cumin is very rich in these compounds called flavonoids. I love the smell and taste of Australian fresh lamb and therefore don't always use cumin in my lamb rubs, in saying that, oregano, sage, allspice, and thyme are other examples that help mask the gamey flavours in lamb. Would have been good to have roasted carrots, garlic cloves in their skins and a celery stick with the onions. Once they’re all cooked put into a deep pan and using a potato masher, mash the ingredients. Simmer for 10 minutes. Add a large knob of butter and a tablespoon of plain flour. Mix well and simmer for a further 5 minutes then strain. You should have a rich creamy sauce/gravy. Gordon Ramsey recipe. It’s works every time
