You can make a smaller version of the lecho and it's called 'buchon'. Basically pork belly wrapped and prepared the same but you only need a home oven. That's a video on its own 😊
Awesome review! If you want to make lechon at home, you can create a version of it using just the pork belly. There are several recipes online that you can use as a reference.

But one thing about letchon in every parts of philippines have a different taste of letchon like in cebu if you go to carcar and letcon of manila. Some is more salty

Sam, you should also try grilled chicken intestine or chicken isaw. And let's see. For us Filipinos, rice is life. We eat rice with any viand, even with spaghetti 😂 Enjoy more Pinoy food ❤

Really good that you tried intestines. But it's more for people who grew up with it... I also prefer the meat and skin fried until crispy. And you actually eat a lot of rice and sauces with all dishes. So the taste is not always so intense... Chili - spiciness usually helps too! xD
Just think that if it's tasty enough, then it's clean. There massive taste diff between just not seasoned well vs not clean. Not clean intestines taste not edible.
"Pork lechon/lechon baboy" is a slow roasted whole pork on a pit fire not grilled while "lechon kawali" is just a typical deep fried pork nothing special. There are also different types of roasted meats in PH which is well known like lechon manok(slow roasted whole chicken and lechon baka(slow roasted whole beef.

Pig and chicken intestine (isaw) is street food. I'm surprised that they serve them in restaurants nowadays.
