Instead of milk use coconut milk, instead of eggs use more cornstarch or agar, instead of cream use coconut cream? If you can't convert this simple recipe good luck with long term veganism!!

This looks amazing, whish you showed us how do you cut it at the end since that is where I always struggle, cutting through that pastry and not mangling it all up.
Be sure to use a serrated bread knife and use a very gentle sawing motion as you cut through the layers to avoid any breakage. Basically, let the knife do the hard work and avoid any surplus pressure as you cut! Hope this helps! 😊

You can pre-cut the top two layers before assembling. And then just cut through the bottom afterward. I saw Jaque Pepin (on TV) do that with the top of a Paris Brest because it has a cream filling. Or you can just cut all the pastry into portion sizes and assemble it afterward. That way you won't even have to cut through the bottom once finished. It's a bit fiddlier assembling individual servings than the whole thing but you also avoid the whole squashing thing.

Most grocery stores will carry it! Check the coffee aisle first. You would see it next to the instant coffee, dark roast or whole bean espresso. Otherwise you might find it in the international aisle or the baking aisle. And of course, there is always ordering from online if you cannot find it in your local grocery stores!

Haha, Thomas Joseph obviously studied this old video in making the same thing: ua-cam.com/video/zM_DzJIl0WA/v-deo.html. Funny how Thomas simplified/“edited” the puff pastry baking process (just one pan). Thomas was actually more meticulous than Martha. I bet most of what Martha presents to us as her own marvelous creation is done and designed by her behind-the-scenes “people.” Martha seemed understandably a bit nervous as I’m sure she was thoroughly coached before this segment. I’d like to see what’s really going on behind the scenes. 😆 In the end, the super thick layers of the Napoleon are quite inelegant; not like the thin delicate puff pastry of Napoleons I’ve seen in bakeries: i.pinimg.com/originals/16/56/16/165616a65141771349056b94ba135b64.jpg. Granted, they call it Napoleon “Dessert” here. I’m not convinced anyone has ever CUT the Napoleon into the individual servings, as we see it neither here nor in Thomas’s video! We want to see that and how it’s done. Details, details...

Freeze it for an hour and then use your sharpest knife to cut it into the portion size you'd like to serve!
