- This Italian stuffed zucchini recipe with lemon, ricotta, and Parmigiano Reggiano cheese is super easy and so delicious! All you have to is scoop out the inside of the zucchini, par-cook them in the oven, and stuff the zucchini boats with the creamy ricotta filling. The whole recipe can be completed in 30 minutes. -4 medium zucchini
-1/2 cup plain breadcrumbs
-2 cups ricotta
-1/2 cup grated parmigiano reggiano
-2 cloves garlic
-2 medium lemons
-1/4 cup parsley
-1/4 cup olive oil
-1 tsp kosher salt

Looks tasty, but I wouldn’t want to just trash the guts of the zucchini, I would’ve added that to the mix as well! 👍🏽👍🏽
I just did, after removing most of its water content and pan frying it for a few minutes. Also added some preserved lemons.

Love the simplicity of this. I had to chuckle. My Dad grew huge gardens and occasionally things would get overlooked. He grew more than one 3' long zucchini that was way bigger in diameter than a baseball bat. Think one of those would work? LOL! 😃

I’d like your perspective. I went to chef-led cooking class. When we started to slice garlic across the clove, like you do, he stopped us and explained the taste is much milder when slicing along the length. We tasted a slice across and a slice lengthwise. Lengthwise was much milder. Have you ever heard of this?

I love zucchini with lemon! Even fried, I add lemon juice and salt. It is so good! No need to dip in anything!
These look delicious and I will certainly make them. To increase the lemon flavor I'll add the zest of the lemon rather than more juice, which can water down the filling. Might add the zucchini pulp to the filling, too. Thanks! ~ Lisa

Most times when I see stuffed zucchini, it's stuffed with stuffing (like Thanksgiving stuffing). This looks really great! I am so trying this.
