Hey, you’re welcome. You definitely want to learn bokmål instead of nynorsk. Different regions will have different dialects, and some may be more similar to nynorsk than bokmål, but everywhere you go you’ll be understood if you use bokmål.
The sk sounding like sch usually occurs when it is the beginning of a word. If the sk is at the end it doesn’t sound like that, examples: faktisk, spansk, tysk (almost every language, in Norwegian, ends with -sk in this manner)

We have the Jo word in Dutch as well (Jawel). I think the best translation would be "Yes, actually", that's a phrase people often use in that context.

You can say both, they have the same meaning. Just like "I don't like" and "I dislike" in English
