Smoked Spatchcock Chicken - Easy Foolproof smoked chicken every time.

  • Today we are smoking up a whole chicken using the spatchcock method. Spatchcocking is taking a whole bird and flattening it out to get a more even cooking temp throughout and giving the whole bird a great smoke flavor. We are taking this over 5 lb bird and smoking at 275F o the Yoder YS640s. Cook time was right at two hours until IT reached 162-165F. We glazed this bird with a sweet asian glaze and it turned out amazing.

      Will, I am in the middle of a move. New pit is at the new house but we have not settled there yet. Waiting on contractors to finish a few things. It’s too heavy to move twice so I had it delivered there. Soon I hope. Waiting on backordered wood floors.
