Your videos are awesome! You give a lot of great details to explain how to do it. My only critique is that you don't always tell how much time has elapsed, what your total cooking time ended up being, or how long to let the meat rest after cooking. For people just starting out it would give them a better idea of what to expect.

I dig it, but it’s a bit big for my normal weekend cooks. I feel like I need to cook more, just cause there’s so much space.

I don’t think so. You still get the flavor cutting it up.

Thanks, took a little less than two hours. Only added one more split and a few more chunks of charcoal.

Crank up the heat.
Whenever I smoke spatchcock chicken in my offset the thighs are under cooked by about 10-15 degrees
Tent some foil over the breast while the thighs come to temp. The foil will keep the breast from drying out.
Ever smoke any wild game. Like deer,hog,duck,alligator?
I’ve done duck once. I don’t get a lot of wild game here in SoCal.
I’ve seen some people manage to smoke some deer and it looked excellent. Apparently it’s really hard to do well though and it’s super easy to dry out.
