    Your absolute refusal to squeeze the meat shows an inherent steadfastness to and no compromise of quality. I love it. Great job bro

    Your videos are awesome! You give a lot of great details to explain how to do it. My only critique is that you don't always tell how much time has elapsed, what your total cooking time ended up being, or how long to let the meat rest after cooking. For people just starting out it would give them a better idea of what to expect.

    Nice work as always man. I've been loving doing yard birds on the XD. Haven't spatchcocked one yet. But I do a cast iron pan bird in that style so I know the benefits. Cheers pal!

    • @CjsQue

      I dig it, but it’s a bit big for my normal weekend cooks. I feel like I need to cook more, just cause there’s so much space.

    Is it a waste of seasoning to season the backside of the chicken?

    • @CjsQue
      @CjsQue  2 роки тому

      I don’t think so. You still get the flavor cutting it up.

      Thanks, took a little less than two hours. Only added one more split and a few more chunks of charcoal.

    Whenever I smoke spatchcock chicken in my offset the thighs are under cooked by about 10-15 degrees

    • @PumpkinPails
      @PumpkinPails Рік тому +1

      Tent some foil over the breast while the thighs come to temp. The foil will keep the breast from drying out.

    Ever smoke any wild game. Like deer,hog,duck,alligator?

    • @CjsQue
      @CjsQue  2 роки тому +1

      I’ve done duck once. I don’t get a lot of wild game here in SoCal.

    • @Chevsilverado
      @Chevsilverado Рік тому

      I’ve seen some people manage to smoke some deer and it looked excellent. Apparently it’s really hard to do well though and it’s super easy to dry out.

      Cooks the birds more evenly. You're not missing much by removing the back bone.
