I'm surprised she uses Pearl River Bridge soy sauce (Chinese) as her light soy sauce. Whenever I tried to make Thai stir fries before it didn't taste like the restaurant version, but then I got Healthy Boy Mushroom soy sauce (Thai), and it made all the difference. To me, Thai soy sauce tastes like a blend of Chinese soy sauce with a bit of Maggi or Golden Mountain sauce and a little sweet/bright. Honestly, I stopped buying Maggi for banh mi's bc I find the Thai soy similar enough. I think Chinese soy sauce is a little bit deeper w/ a slightly bitter after taste. I feel like it needs to be cooked into a dish bc on its own it's a little harsh kinda like fish sauce. And then Japanese soy is its own animal. Japanese made Kikkoman (plastic bottle, not the one in the glass bottle which is American made), has probably the cleanest, and most versatile use. I like it straight out of the bottle for dipping or making dressings to actually cooking with it.

Love your channel! Couple questions I use Braggs liquid aminos for soy sauce and now I see they have a coconut liquid aminos that has a sweet taste would that work for the sweet soy? Also I use apple cider vinegar if using that instead of white would I still use a sweet soy sauce? Thanks
Coconut aminos and Bragg's taste like less salty Maggi or Golden Mountain sauce. They are sauces used in SE Asian dishes but they don't have the same depth and fermented umami that soy sauce has. I know people that primarily use Bragg's bc they are scared of soy sauce which is whatev but it's like using a lemon vs a orange in a recipe - totally diff flavor profiles. You're better off using a gluten free soy sauce or a Tamari, and if soy is your problem, there's a whole continent that has been using it for centuries, and they have a much longer life expectancy than any countries of the west.

I buy the ABC brand for dark soy sauce. Lee Kum Kee brand is also good for light and dark soy sauce. There's also mushroom soy sauce.

You could add the tidbit of info that See Ew is the Teochew Chinese dialect for Dark Soy Sauce. The light soy sauce is known as Cheow Cheng.
