what you really need to be bothered about is the UEV. the user usage metadata collections service. since i havent been using windows for months, i forgot if that particular service can be disabled from the services.exe app/window. if you cant(greyed out) you need to run regedit, and then go to local machine, and i forgot the detail path, but lead to SERVICES. and find the id name there(see it in the services.exe window of that UEV) , to the right pane of the service in regedit, edit the "start" to number "4". which means "disabled". exit regedit, reboot. but i dont know how to delete the already recorded data of that UEV service(the logs) in your windows. that UEV service uploads all info of your desktop, your wallpaper, your name, your theme, your settings, your lockscreen, your documents contents etc, EVEN THUMBNAILS of every single images and taskbar's opened windows activity still recorded in your desktop cache. and not to your cloud's user backup system of your microsoft account. but to MICROSOFT 's OWN DATABASE.
Please dont disable windows updates, its a stupid thing to do. Security updates are very important if you dont want to be hacked, for starters. Windows 11 is also very new (as far as OSes go) so there will be bug fixes more often than an old OS also.
