Make sure to blend and mix well otherwise the cocoa butter might come out of solution and give an oily residue on top. While this is a good recipe if you don't want to get the cocoa butter you can ferment it then roast the beans and blend/grind till you get cocoa mass then put that through a oil press at high pressure (or whatever it's called) then you get cocoa butter and cocoa powder like the one you can buy in the store.
