How To Cook Chicken Stew With Potatoes And Carrots

  • In today's recipe, we'll look at How To Cook Chicken Stew With Potatoes And Carrots. This is a pretty standard stew that I make for my family regularly - that means it's easy to cook and virtually foolproof. It goes very well on top of a steaming bowl of white rice.
    Ingredients:
    1kg chicken, chopped
    4 cloves garlic
    2 carrot, medium
    1 onion, medium
    3 potatoes
    300 ml water (about - depending on big your pot is)
    2 Tbsp oil
    Corn starch slurry (2 Tbsp cornflour + 4 Tbsp water)
    Seasoning:
    2 Tbsp light soy sauce
    1 tsp dark soy sauce
    1 Tbsp oyster sauce
    1 Tbsp Chinese cooking wine
    1/4 tsp white pepper
    1/2 tsp sugar
    1/2 tsp salt

    I replace chinese wine to apple cider/ natural date vinegar, sugar to honey. Turn out simply delicious 😊 thank you for yr guidance❤

    I cooked this today, followed the recipe mostly. Just replaced oyster sauce, sugar and Chinese wine with honey and rice vinegar.

    Hi busy daddy cooks, what would be a alternative to the Chinese cooking wine?
    Just in case someone I am cooking this for is allergic to Alcohol

      Hi. If your concern is alcohol, you can leave out the Chinese cooking wine or any alcohol related ingredients.

      Try a little sherry or white wine. Or you can leave it out of the recipe as it is not a key ingredient.

    I tried cooking this dish today. It was yum but…. It didn’t look like yours. LOL. Mine seems very oily and watery. Not sure is it the natural oily-ness from the chicken? I used only wings cos that’s what I had in the fridge. And I think I added too much water and didn’t dare to add any more slurry than what you’ve mentioned.

      LOL.
      Maybe you used too much oil when frying.
      If there is too much water, you can boil it off, with the lid off, at the end of the cooking process.
      I always add a little slurry at a time. And add more if it is not thick enough.

      No, you do not need to use potatoes. Use any root vegetables you like. Hope this helps 😀

      I know that chicken skin contains saturated fat, but it also has healthy benefits if we eat it sparingly. The unsaturated fats in chicken skin can help lower bad cholesterol and raise good cholesterol. The chicken skin also contains collagen which can benefit skin health and joint function.
      I also think it is one way to stop food waste.
