I noticed when freeze drying Skittles, the oil becomes exceptionally dark. Research suggests that the issue is hydrogenated palm kernel oil.

What about replacing your predicted with an oil water separator filter?

Have you considered installing an automatic oil/water separator on the vacuum pump so the water can be automatically removed? Also, does your vacuum pump contain a gas ballast to reduce condensation within the pump?

that's actually a cool idea. For freeze dryers in general.
I see that there are inline separators online for cheap.
I wonder what effect does adding it have on the pressure.
