The RGM Watch company of Lancaster County Pennsylvania under Roland G. Murphy still routinely produces guilloche dials on antique rose engines. I've been privileged to witness the process in person on a couple of occasions.
Absolutely stunning piece. Among modern brands, Louis Érard recently did a number of rather affordable hand-guilloched watches as part of their ongoing series celebrating old and endangered watchmaking crafts.

Looking at things like Rose Engines, I can see someone adding CNC to that. The CNC drives control all the handles etc. The operator does things like set the depth, sets up the machine. This is not a diamond tipped tool being dragged across the service. Next, and I'm off doing some research. There must be software for designing guilloche patters.
